Sweet Pepper Kick Burger

This Burger takes its inspiration from a classic hors d’eouvre of pepper jelly over Cream Cheese served with crackers. The combination of flavors; rich and creamy and deliciously spicy is suited perfectly to a burger. The maple bacon grilled over fire adds a smoky depth that takes the flavor of the unique burger to the top.

Ingredients:

1 8oz block Philadelphia Cream Cheese
2 tablespoons minced garlic

12 slices thick cut maple bacon (do not separate)

2 pounds ground chuck
1 tablespoon Tony Chachere Original Creole Seasoning
1 teaspoon onion powder
1 teaspoon garlic powder

12 teaspoons Tabasco Spicy Pepper Jelly

6 Sweet hamburger buns (Such as King’s Hawaiian)
Vegetable oil to brush grill
1/2 cup melted butter to brush buns

Instructions:

Allow cream cheese to become softened to room temperature and mix well with minced garlic. Cover and set aside.

Heat the grill to a medium high heat. Place the bacon across the grill as one piece. As the bacon begins to cook and become translucent, carefully separate each slice with grilling tongs and flip. At this time you should turn the fire off on one section of the grill to allow the bacon to finish cooking from radiant heat (if using gas, or keep one section of a charcoal fire cool). Allow the bacon to cook until crisp, flipping as necessary. Upon removing, cut each slice in half.

To prepare the patties. Combine creole seasoning mix and other spices together. Work the seasoning mix carefully into the ground chuck taking care not to over work the mixture. Separate into 6 equal patties. Brush the grill with vegetable oil and place burgers on medium-hot fire. Cook the burgers to desired wellness (preferably medium) flipping only once during process. Brush buns with butter and place on grill to become lightly toasted, careful not to burn.

To assemble burgers, place bottom bun down and cover with 4 slices of bacon. Cover bacon with burger and spread 1 tablespoon of the cream cheese garlic mixture over entire patty. On top of this, add 2 teaspoons of the spicy pepper jelly. Cover with bun and serve.
