1 fresh papaya
1 fresh mango
1/2 c. fresh pineapple
1/2 red bell pepper
1/2 green bell pepper
1/2 red onion
1 jalapeño (optional)
2 Tbsp. fresh chopped cilantro
1/2 fresh squeezed lime
1 Tbsp. sugar
2 lbs. ground beef
2 Tbsp. Caribbean jerk seasoning
1 tsp. sea salt
6 whole wheat hamburger buns
4 Tbsp. Colavita extra virgin olive oil
6 slices (rings) fresh, cored pineapple
6 slices provolone cheese
FRESH TROPICAL FRUIT SALSA: Dice papaya, mango, pineapple, tomatoes, red and green bell peppers, red onion and jalapeño (OPTIONAL!) and place in a bowl. Add chopped cilantro, lime juice and sugar. Blend well and set aside.(OR use 1 cup of your favorite fruit salsa in lieu of making the Fresh Tropical Fruit Salsa!)
BEEF PATTIES: Mix ground beef, jerk seasoning and sea salt thoroughly in a bowl. Make six burger patties and put them on a plate ready for the grill. Brush inside of buns with olive oil, put them on a plate ready for the grill. Brush both sides of the pineapple slices with olive oil and have them on a plate, ready for the grill. Have provolone handy for the grill.
GRILL INSTRUCTIONS: Preheat gas grill on high; turn to medium. Place burgers on grill and cook according to your liking, approximately 5-6 minutes per side for medium well burgers. After flipping burgers, add pineapple slices to the grill. Cook pineapple for approximately 4 minutes on each side. After flipping pineapple, add provolone cheese slices to burgers. Also add buns, flat side down, grill for about 2 minutes. Remove buns, pineapple and burgers from the grill.
BUILD YOUR SWEET HEAT ISLAND BURGERS: Place heel (bottom) of bun on a plate. Add jerk seasoned cheeseburger on the heel. Add grilled pineapple slice. Top with 2-3 Tbsp. of the Fresh Tropical Fruit Salsa. Add the crown (top) of bun and...ENJOY!!!!
** As mentioned above, you can easily substitute your favorite fruit salsa in place of the homemade Fresh Tropical Fruit Salsa and cut down on your preparation time.
