Sweet Glazed Spicy Chipotle Burgers

The juicy and robustly flavored patty serves as a strong backdrop to it's sweet glazed outside which works as a balance to the spicy chipotle ketchup.

Ingredients 

Spicy Chipotle Ketchup
1 cup ketchup
1/4 cup red onions, chopped
5 tablespoons chipotle peppers in adobo sauce
1/4 cup brown sugar
1 clove garlic
Sweet Honey Glaze
1 cup honey
1 tablespoon brown sugar
2 1/2 teaspoons Green Pepper Sauce
Patties
1 3/4 pounds ground chuck
1 cup red onions, chopped
2 garlic cloves, minced
3 tablespoons Sutter Home Cabernet Sauvignon wine
2 teaspoons Worcestershire sauce
1/4 teaspoons liquid smoke
1 teaspoons ground black pepper
1 3/4 teaspoons kosher salt
1 tablespoon chipotle pepper in adobo sauce, chopped
2 tablespoons brown sugar
Vegetable oil, for brushing the grill rack
6 ounces Gouda with chipotle peppers
6 whole wheat hamburger buns, split
Head of green leaf lettuce

Instructions 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat gas grill to medium-high. To make the spicy chipotle ketchup, combine the ketchup, red onions, chipotle peppers in adobo sauce, brown sugar, and garlic in a food processor or blender and process until well blended. Remove the mixture to a small bowl and refrigerate until serving. To make the sweet honey glaze, combine the honey, brown sugar, and green Tabasco sauce in a medium mixing bowl. Mix well and leave at room temperature until ready to glaze the patties. To make the patties, combine the beef, red onions, garlic, Sutter Home wine, soy sauce, Worcestershire Sauce, liquid smoke, black pepper, salt, chipotle pepper in adobo sauce, and brown sugar in a large mixing bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into six equal portions and form the portions into patties the same size as the buns. Lay the patties out on a flat portable surface such as a cookie sheet. Apply roughly one tablespoon of the sweet honey glaze, evenly coating the patties. Flip the patties and repeat the process. Brush the grill rack with the vegetable oil. Place the patties on the rack directly over the heat source and grill until bottoms are browned, about 3 to 4 minutes. Flip the patties and continue grilling until done to preference, about 5 minutes for medium. During the last few minutes of cooking, place the buns cut side down on the outer edges of the grill rack to toast lightly. When the patties have roughly 2 minutes left of cooking time, apply an equal portion of the Gouda to each patty, putting on the grill cover for the remaining cook time. To assemble the burgers, apply a thick coating of the spicy chipotle ketchup to the cut side of the bun tops. On each bun bottom, place a patty and a piece of green leaf lettuce roughly the same size as the patty. Add the bun tops and serve.
