Sweet and Spicy Wasabi Burgers with Caramelized Peppers and Onions

Ingredients

Patties:
1/2 cup House of Tsang Bangkok Padang Peanut Sauce (Asian food section at any supermarket)
1/2 cup Mae Ploy Sweet Chili Sauce (Asian food section)
1 tsp honey
1 Tbsp Wasabi paste
1 1/2 Tbsp Montreal Steak seasoning
3 cloves fresh garlic, minced
1 lb ground chuck
2 lbs ground sirloin
Wasabi Mayonnaise:
3/4 cup mayonnaise
1 Tbsp rice wine vinegar
1 tsp soy sauce
1 tsp honey
1 tsp Grey Poupon Dijon mustard
1 Tbsp Wasabi paste
3 Tbsp (packed) fresh ginger, grated
Caramelized Peppers and Onions:
2 Tbsp Colavita extra virgin olive oil
2 cloves fresh garlic, minced
pinch of salt and pepper
1 red bell pepper, cored, seeded and sliced in 1/4 inch strips length wise
1 medium size yellow sweet onion, sliced in 1/4 inch strips
3 Tbsp Colavita Extra Virgin olive oil
6 big slices pepper jack cheese
6 whole wheat Kaiser bakery rolls, split

 

Instructions

To make the patties: Combine the peanut sauce, sweet chili sauce, honey, Wasabi paste, steak seasoning, and garlic in a large bowl. Stir together well and mix in the chuck and sirloin. Place bowl in refrigerator and let marinade for at least 1 1/2 hours. After the meat has marinated, form into 6 patties.

To make the Wasabi mayonnaise: Combine the mayo, rice wine vinegar, soy sauce, honey, mustard, Wasabi paste, and ginger in a bowl. Mix, cover, and refrigerate until ready to serve.

To prepare the peppers and onions: Preheat grill to low. When grill is ready, combine the olive oil, garlic, salt and pepper in a fire-proof sauce pan. Sauté the garlic then add the peppers and onions and sauté until caramelized and tender. Remove from grill and set aside.

After the peppers and onions are caramelized, turn grill up to medium-high. When grill is ready, brush the grill rack with olive oil. Place the patties on the rack. Cover and cook, turning once, until done to preference, 4-6 minutes on each side for medium. During the last few minutes, place a big slice of pepper jack cheese on each patty. During the last 1-2 minutes, place the buns, cut side down, on outside of rack to toast lightly.

To assemble the burgers: Spread the Wasabi mayonnaise equally over the cut sides of each bun. On each bun bottom, place a patty, and on each patty place equal portions of the peppers and onions. Add the bun tops and serve.
