Sweet and Spicy Hawaiian Burger

It brings together some very traditional tropical flavors in a unique way and adds a nice kick.

Ingredients 

Patties
• 2 pounds ground chuck
• 1 teaspoon ground sea salt
• 1 teaspoon ground black pepper
• 4 tablespoons soy sauce (shoyu)
• 1 tablespoon olive oil
• 2 cloves garlic, minced
• 2 Tbsp ginger, minced
• ½ cup panko breadcrumbs

Jicama Slaw
• 1/4 cup fresh lime juice
• 1 tsp lemon zest
• 1 medium jicama shredded
• 1/2 teaspoon ground sea salt
• 1 Tbsp pineapple Juice
• 1 Tbsp Ginger, minced

Sweet and Spicy BBQ Sauce
• 12 oz tomato sauce
• 2/3 cup cider vinegar
• 1 Medium Onion Diced
• 5 Tbsp Honey Mustard
• 1 Tsp ground sea salt
• 1 Tsp cayenne pepper
• 1 cup light brown sugar
• 1 Tbsp white flour
• 2-3 tablespoons vegetable oil, for brushing on the grill rack

Additional Items
• 6 Pineapple slices
• 6 Slices Sharp Cheddar
• 6 onion rolls, split

Instructions 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
To make the BBQ Sauce combine all the ingredients except flour in a saucepan and let simmer for 30 minutes. Then stir in flour until dissolved and sauce thickens, then remove from heat

To make the Slaw toss the shredded jicama, lemon zest, lime juice, pineapple juice, ginger and sea salt in a non-reactive bowl, cover and set aside

To make the patties gently combine all the ingredients, handling as little as possible. Form into 6 patties.

Brush the grill rack with vegetable oil. Place the patties on the rack. Grill the first side without moving the patties for approximately 4 minutes. Turn each patty one-eighth turn, and let grill for 2 more minutes on the first side.

Place pineapple slices on the grill.

Flip the patties, then brush each patty with the BBQ sauce and grill for three minutes, again rotating 1/8 turn on the second side. Let cook another 90 seconds and flip.

Place buns cut side down on the grill to toast.

Flip the pineapple slices.

Then brush the patties with BBQ sauce and let set for 90 seconds.

Top with cheese and let melt for 30 seconds

To assemble, place one pineapple slice on each bun. Add the patties, mound with the slaw, and add the roll tops. Cut the burgers in half with a serrated knife, if desired, and serve.
