Sweet and Sassy Chipotle Burger with Roasted Corn Relish and Chipotle Mayonnaise

Ingredients 

Roasted Corn Relish-
1 large white corn on the cob
½ medium onion minced
2 cloves garlic minced
¼ cup pitted Spanish olives minced
¼ cup sun dried tomatoes (in olive oil)
1 ½ table spoon capers (in brine)
2-3 table spoons chopped cilantro
3 table spoons lemon juice
Pinch of sea salt
Pinch of black pepper

Chipotle Mayonnaise -
4 table spoons red enchilada sauce (I like La Victoria)
8 table spoons mayonnaise (I like Best Foods)
1 table spoon chili powder
2 table spoons of Adobe sauce from can of roasted chipotle peppers
2 small roasted chipotle peppers finely diced (canned pepper in Adobe sauce).

Grilled Pineapple-
1 Ripe pineapple

Patties-
3 lbs 80/20 ground sirloin
2 table spoons red enchilada sauce
2 table spoons Adobe sauce (from can of peppers)
2 table spoons ground cumin
2 table spoon ground oregano
2 table spoon ground sage
1 table spoon sea salt
1 table spoon black pepper
2 package Goya Sazon con Achiote seasoning package
2 cloves garlic minced
½ medium onion grated
3 small roasted chipotle peppers minced
¼ cup sundried tomatoes minced
¼ cup Spanish olives finely chopped

Buns-
6 large onion buns

Dressing-
6 Slices Queso Fresco
Romaine lettuce (6 leafs)

Instructions 

Roasted Corn Relish-
Grill corn over med heat for 4 minutes on each side
When corn is cooked cut off kernels and combine with the rest of the ingredients in food processor and pulse until all ingredients are finely chopped.
Season with salt and pepper to taste, juice ½ lemon (3 tbs) over top of mixture, stir, cover and set aside until ready to serve.

Chipotle Mayonnaise -
Combine ingredients and blend well, cover and refrigerate until ready to serve.
Grilled Pineapple-
Skin, core, slice fruit in ¼ inch doughnuts. Grill for 2 minutes per side over medium heat and set aside for serving.

Patties-
Combine all ingredients well, divide into ½ lb balls, form patties and grill to med well (3-4 minutes per side over medium heat grill).

Buns-
Lightly toast on grill for 1-2 minutes.

Dressing-
Place cheese on patties during last 2 minutes of cook time
spread bottom bun with Chipotle Mayo, place one leaf of roman lettuce
place patty with cheese on top
place pinapple on top of patty
add full table spoon of relish on top
drizzle chipotle may on top
serve.

This recipe is my mother’s "Tamale Pie" deconstructed and adapted for a burger. I used all the seasonings she used and I added a little sweetness with pineapple. My family relocated to Kentucky from Northern California so I try to prepare the dishes I grew up with in California and adapt them to make them my own. This burger is one of those adaptations and my family really enjoys this bold, taste of home.
