Sweet & Spicy Mediterranean Burger
Having a little kick in your food is important to me. I like things on the spicy side but always try to accommodate for everyone's taste and find a happy medium when creating recipes. Often people hesitate to try items with the word spicy in the name but are always pleasantly surprised how a controlled amount of kick adds the perfect flavor and complements other ingredients so well. In addition to spicy foods, I am also a cheese lover and always try new and exciting ways to add cheese to just about any recipe. This burger is really me, and captures many of my favorite food flavors. Grilling burgers in the backyard is a very satisfying experience for me. Being able to incorporate new ideas and flavors makes this one of the very best burgers in my book. It has what I consider my own unique flavor spin.
2 pounds ground chuck
Â½ teaspoon kosher salt
Â½ cup apricot preserves
3 Â½ teaspoons bottled hot chili paste
Â¾ cup sliced jarred roasted red peppers
Â¾ cup chopped tomato
Â½ cup crumbled feta cheese
2 tablespoons chopped pitted kalamata olives
2 tablespoons red-wine vinegar
Â½ teaspoon dried oregano
4 tablespoons extra-virgin olive oil
1 clove garlic
3 cups loosely packed mixed baby salad greens
2-3 tablespoons vegetable oil, for brushing on the grill rack
6 large hamburger buns
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
To make the patties, combine the chuck, salt and apricot preserves in a large bowl, handling as little as possible. Shape into 6 patties to fit the buns. Loosely cover with plastic wrap and set aside.
Combine the hot chili paste, red peppers, tomato, feta cheese, olives, vinegar, oregano and 1 tablespoon olive oil in a medium bowl. Cover and set aside until final preparation.
