Swedish Burger with Gravy

Ingredients 

Gravy:
2 cups of boiling water
2 beef bouillon cubes
4 tablespoons butter
4 tablespoons flour
Patties:
3 slices of white bread, 1 inch thick
1 cup of milk
1 1/2 pounds ground chuck
1 teaspoon onion
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon celery seed
2 teaspoons parsley flakes
Vegetable oil, for brushing the grill rack
Milk to thin gravy
6 Onion rolls, split

Instructions 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill with a cover, or preheat a gas grill to medium high. To make the gravy, place cast iron skillet on grill rack, add water and bring to a boil. Dissolve bouillon cubes in boiling water. Pour bouillon into a 2-cup Pyrex measuring cup. Melt butter in the cast iron skillet. Add flour and stir for 3 to 5 minutes or until well blended and the taste of raw flour has vanished. Slowly stir in bouillon. Simmer and stir the gravy with a wire whisk or wooden spoon until it has thickened and is smooth and hot. Remove gravy from grill. Add milk to thin gravy as needed. To make the patties, in a bowl soak 3 slices of bread in milk for about 5 minutes. Combine the meat, onion, onion powder, salt, pepper, celery seed and parsley flakes in a large bowl. Wring the liquid from the bread. Add the bread to the meat mixture and combine well, mixing lightly with a spoon. Divide the mixture with a large ice cream scoop into 6 equal portions and lightly form portions into patties. Brush the grill with oil. Place the patties on the rack, cover and grill until brown on bottoms, 3 to 4 minutes. Turn the patties and continue grilling until done to preference, about 5 minutes longer for medium. During the last few minutes of cooking, place the rolls cut side down on the outer edges of the rack to toast lightly. Return the gravy to the grill. Add cooked patties to the gravy. Reheat the patties in the gravy. To assemble the burgers, place a generous amount of the gravy over the cut side of the rolls. On each roll place a patty and a generous amount of the gravy. Add the roll tops and serve. Makes six burgers.
