Super Tasty Chile Burger

This burger was created in the spring of 2006 because I knew that I was moving to Arizona. I moved to Arizona from Michigan and I wanted to create something that was southwestren in style.

1 lb ribeye steak
2 tsp kosher salt
1.5 tsp black pepper
2 tsp ground cumin
1 tbs fresh garlic
1/4 c Sauvignon Blanc
4 fresh long green chiles
3 large seeded burger buns
.5 lb cooked smoked bacon strips
2 roma tomatoes
3 leaves green leafy lettuce
3 slices aged cheddar cheese
3 tbs mayo
3 tbs ground mustard

1. Grind the steak in a food processer to a fine grind. 2. Add the salt, pepper, cumin, garlic, wine and 1 chile pepper and grtind until combined. 3. Form meat mixture into 3 patties. 4. Roast the other 3 chiles over a flame and then skin them. 5. Cook the meat patties until the meat is medium. 6. Toast the buns over the grill and then start assembling the burgers. 7. Layer the burgers in the following order, bottom bun, mustard, lettuce, meat, roasted chile, tomato, bacon, cheese, mayo and top bun.

This burger tastes really good. All the people that try this burger want me to give them the recipe. This burger could win the challenge.
