Sunny Side Up Burger

Ingredients

Sun Dried Tomato Sauce:
1 ½ cup dry red wine
14 sun dried tomatoes
1 tablespoon fresh mint leaves
1 ½ tablespoons basil
2 small shallots
1 teaspoon curry powder
2 tablespoons olive oil
3 tablespoons tomato paste
1 roasted red pepper from jar
1 tablespoon Grill Mates Barbeque seasoning
1 teaspoon salt
1 teaspoon ground pepper
Juice from 1 lemon
Toppings:
6 thin slices of fresh mozzarella cheese
6 large boston lettuce leaves
6 medium eggs
6 whole wheat hamburger buns – tops with a 1 inch hole cut out from center 
Patties
1 ¾ lbs. ground sirloin
3 tablespoons cumin powder
2 tablespoons coriander powder
1 ½ tablespoons cayenne pepper
1 tablespoon ground black pepper
2 tablespoons sweet paprika powder
2 tablespoons Worcestershire sauce
2 tablespoons Liquid Smoke
2 tablespoons dried thyme
3 tablespoons brown sugar
8 cloves of garlic minced
1 small red onion diced
2 cups bread crumbs
2 tablespoons olive oil
1 large egg
6 tablespoons canola oil, for brushing the grill rack

 

Instructions

Directions: Put sun dried tomatoes in a bowl with the wine. Let soak for 45 minutes to one hour. Set aside. In a large bowl mix together all patty ingredients. Let mixture sit in the refrigerator for at least 45 minutes to one hour. After approximately one hour form meat mixture into 6 – ¾ inch thick patties. Cover for 10 minutes at room temperature. Light a gas grill. Get grill heated to 300° degrees. In a small saucepan heat sun dried tomatoes and wine on medium heat until wine is reduced halfway. Take off grill and let cool 2 or 3 minutes. Combine tomato reduction and the rest of the sauce ingredients in a food processor and blend. Set aside. Brush the grill rack with the Canola oil. Grill patties on Medium High heat –between 350° and 400° degrees – 5-6 minutes on each side until medium well. 2 minutes before hamburger patties are done cook 6 eggs on an upper grill rack. Spray a small frying pan with olive oil and cook eggs sunny side up until yolk is firm. Put buns with a 1 inch hole cut out from the tops on the grill to warm up. Place a patty on each bottom bun. Top with one slice of mozzarella cheese, 2 tablespoons of the Sun Dried Tomato Sauce, one lettuce leaf, then one egg. Make sure the egg yolk is centered in the middle- some may have to be trimmed. Top the burger with the top bun so that the yolk is showing through. Enjoy!
