Sugar and Spice Rubbed Burger with Cilantro Slaw and Chiplote Mayonnaise

Ingredients:

Patties
2 1/2 pounds ground beef
1/4 cup tomato sauce
4 tablespoons brown sugar
2 tablespoons hot paprika
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
6 slices pepper jack cheese
Cooking Spray

Cilantro Slaw
2 1/2 cups pre-packaged coleslaw mix
1/2 cup chopped cilantro
4 tablespoons olive oil
4 teablesppons sour cream
1/8 cup fresh lime juice
zest from 1 lime
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup cucumber ( cut into thin matchsticks)

Chipolte Mayonnaise
6 tablespoons mayonnaise (good quality)
3 chipolte peppers in adobe sauce ( chopped )

6 Sesame seed hamburger buns

Instructions:

Step 1: Prepare Cilantro Slaw
Combine coleslaw mix, cilantro, olive oil, sour cream, lime juice and zest, cucumber , salt, and pepper. Keep in a cool place unti lready to assemble burgers.

Step 2: Prepare Mayonnasie
Combine mayonnaise and chipolte peppers and keep in a cool place until ready to assemble burgers.

Step 3:
Combine ground beef and tomato sauce. Form into 6 patties. In a large plate combine the spices. Completly coat each pattie with the spice mix. Press the spices into the patties. Generously coat the grill with cooking spray and heat to medium high. Place patties on grill and cook for 4 minutes on each side. During the last minte place a slice of pepper jack cheese on each pattie.

Place buns on grill to slightly toast on both sides.

Assemble burgers by putting chipolte mayonnaise on bottom bun. Top with a pattie, then 1/2 cup of cilantro slaw. Place top bun on top of slaw. Cut in half and enjoy.
