Ingredients

4 lbs. fresh ground chuck
1/2 cup fresh basil, chopped
1/2 cup fresh thyme, chopped
1 cup Grey Poupon Dijon Mustard, divided
2 teaspoons salt
2 teaspoons fresh-ground black peppercorns
1 8 ounce package cream cheese, softened
1/2 package zesty Italian dressing mix
3 green onions, chopped
1/3 cup pitted black olives, chopped
3 Roma tomatoes, diced
6 crusty French bread rolls
6 tablespoons Colavita Extra Virgin Olive Oil
6 slices prosciutto ham
6 slices Fontana cheese
6 Romaine lettuce leaves

Instructions

Preheat gas grill on high for about 10 minutes. Meanwhile, in a large mixing bowl, combine 4 pounds ground chuck, fresh basil, fresh thyme, 1/2 cup of Grey Poupon Dijon Mustard, salt and pepper until well mixed. Form into twelve 1/3 pound patties and place on plate; set aside. In a medium mixing bowl, cream the cream cheese until fluffy. Stir in zesty Italian dressing mix until well blended. Fold in green onions, olives and tomatoes. Spoon even amounts of the cream cheese mixture into the center of six burger patties until all has been used. Top each with a second burger pattie to form a larger stuffed burger, and pinch edges to seal. Turn the grill heat down to medium-high, and place the prepared burgers on the heated grill. Grill 5-7 minutes then turn to cook the other side. Cook burgers until done or until the internal temperature reaches 165-170 degrees. While burgers are grilling, split the crusty french bread rolls in half lengthwise, and brush each side of the roll with 1/2 tablespoon Colavita Extra Virgin Olive Oil. Place bun halves on grill, oil side down, and grill until lightly toasted and golden brown. Remove from grill and spread the rolls with the remaining 1/2 cup Dijon Mustard in even amounts; place on a serving plate and set aside. Just before removing burgers from the grill, place one slice of prosciutto ham and fontana cheese on top of each burger. Close the grill cover and let cheese melt for about 1 minute. Remove burgers from the grill and place on bottom half of the toasted french rolls. Top with lettuce and top half of the toasted rolls. Serve to your hungry guests and enjoy! Makes 6 stuffed burgers.
