Stuffed Taco Burgers

These burgers are great for a festive outdoor barbecue! Wear a sombrero and chili apron while grilling. Serve these burgers along with salsa and chips, guacamole, corn on the cob, margaritas and other Mexican delights. Throw in a pinata and a little Mexican music!


2 lb. lean ground beef
1 pkg. taco seasoning
1 c. plain bread crumbs
2 eggs (lightly beaten)
1 small can chopped green chilis (drained)
Chunky salsa
grated sharp cheddar cheese
large hamburger buns
sour cream
sliced tomatoes
hamburger buns


Mix ground beef with taco seasoning, bread crumbs, eggs and chilis. With clean hands, flatten 1/2 c. hamburger mixture on a piece of waxed paper. Place a piece of waxed paper on top and, using a rolling pin, flatten to about 1/4 in. thick and 5-6" in diameter. Do the same with another patty. Remove paper and put 1 tbsp. DRAINED chunky salsa in the middle of 1 of the flattened patties and sprinkle with 1 tbsp. grated cheese. Remove the paper from the top of the other patty and carefully place it on top of the patty with cheese/salsa and remove paper. Carefully seal the edges of the burgers to hold in the stuffing and place aside. Continue until all burgers are completed. Grill over low coals about 7 min. on each side, turning only once, carefully removing. Serve on a grilled hamburger bun and garnish with sour cream, more cheddar cheese, lettuce, and tomato.


Yields approx. 6-8 stuffed burgers.
