Stuffed Polynesian Burger

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

fresh pineapple

Ingredients:

1/3 cup of mayonnaise

½ teaspoon minced garlic

½ teaspoon Soy sauce

3 tablespoons unsweetened coconut powder (or finely chopped)

2½ teaspoon lemon pepper

1 sweet ripe whole pineapple

1 teaspoon Cayenne pepper powder

½ tablespoon of salt

½ tablespoon of garlic powder

1 teaspoon ground cinnamon

3 pounds of raw 85/15 ground chuck beef

6 hamburger Kaiser rolls

½ cup softened butter

4.8 ounces of Swiss cheese (6 slices)

Instructions:

Prepare Polynesian mayonnaise

Place 1/3 cup of mayonnaise into a small bowl, add; 1/2 teaspoon minced garlic, 1/2 teaspoon soy sauce, 1 Tablespoon coconut powder, and ½ teaspoon lemon pepper.

Cut through the pineapple 1 inch from the top. On the cut side of the pineapple top, use a fork to grate the pineapple into a small dish. Add 1 Tablespoon of drained pineapple to the mayonnaise mixture.

Stir to blend. Cover and place mixture in refrigerator until needed.

Prepare ground chuck

Place 3 pounds of ground chuck into a large bowl

To the ground chuck add; ½ Tablespoon of salt, ½ Tablespoon garlic powder, 2 teaspoons lemon pepper, 1 teaspoon cayenne pepper powder, 1 teaspoon ground cinnamon, and 2 Tablespoons coconut powder

Mix the ground chuck until spices distributed evenly.

Divide the ground chuck into 12 – 4 ounce portions.

Stuff the patties

The patties can be pressed by hand, but I find using 2 bowls with 5 inch flat bottoms easier.

Place 4 ounces of ground chuck on a square of plastic wrap, fold plastic wrap loosely over ground chuck and place in bottom of one bowl, place the other bowl on top of wrapped ground chuck and press firmly until ground chuck is molded into the bottom of the bowl. Remove the formed ground chuck patty and repeat for the other 11 patties.

Place .8 ounces (1 slice) of Swiss cheese onto a formed patty and place a second patty on top. Press the edges of the 2 ground chuck patties to seal in Swiss cheese.

Prepare Pineapple

Cut the pineapple into 6 – ¼ inch slices, removing the outer skin. Only remove the pineapple core if it is too hard or you prefer to remove it.

Prepare Kaiser rolls

Slice each Kaiser roll if needed.

Spread 1 tablespoon of softened butter on the inside of each half.

Cooking

Place hamburger patties onto a grill preheated to a medium heat.

Cook patties for 4 minutes on each side for a well done burger.

Place Kaiser rolls, butter side down on grill until brown (2-3 minutes)

Place pineapple slices on grill for 2 minute on each side

Create Polynesian Burger

Spread 1 Tablespoon of mayonnaise mixture onto the top half of grilled Kaiser rolls

Place 1 stuffed ground chuck patty on bottom half of Kaiser rolls

Place one pineapple slice on top of each stuffed patty

Place the top half of each Kaiser roll on top of the pineapple slice of each Kaiser roll.
