Stuffed Mediterranean Burgers

Ingredients

1 1/4 pound ground sirloin
1/2 pound ground veal
3 cloves chopped garlic, divided
1 large red onion, chopped and divided
kosher salt and lemon pepper; to taste
3/4 teaspoon dried oregano, divided
1/2 cup olive oil
1/4 cup crumbled feta cheese
1/4 cup kalamata olives, pitted and chopped
1/2 cup drained plain yogurt
1 cucumber, seeded and grated
6 tablespoons prepared hummus
2 tomatoes
6 rounds of pita bread, pre-sliced
1 cup shredded romaine lettuce

 

Instructions

Heat gas grill to medium, cover lid. In a medium bowl; combine ground sirloin, ground veal, 2 cloves chopped garlic, 1/4 cup of red onion, 1/2 teaspoon dried oregano, salt, lemon pepper, and 2 teaspoons olive oil. Set aside. In another small bowl, combine feta cheese, chopped kalamata olives, remaining chopped garlic, 1/4 cup onion and oregano. Salt and lemon pepper, to taste. Drizzle with 2 teaspoons olive oil. To form burger patties; divide the meat mixture into 6 equal portions. Take each portion, and shape into a round disc. Make a well in the center of the disc, and place a spoonfull of cheese mixture into the well. Cover the stuffing, and flatten into a circle. Repeat for all 6 patties. Brush the grill with olive oil Place the hamburgers on the grill, and brush the tops with olive oil. Cook on one side until golden brown, about 10-12 minutes and flip. Close the lid of the grill while cooking. The second side will not take as long to finish cooking. Remove from grill when browned and warmed through. Place on plate. Cover with foil for 10 minutes. Meanwhile, in a small bowl, combine cucumber and drained yogurt. Season with salt and lemon pepper. Place the pita rounds on grill for 2-4 minutes, to warm. To assemble, spread 1 tablespoon of hummus onto top of each hamburger patty. Place hamburger into warmed pita round. Layer in a slice of tomato, a slice of red onion, and lettuce. Drizzle 1 tablespoon yogurt mixture over top.
