Stilton Stuffed Big Ben Burger

Ingredients

2/3 cup mayonnaise
2 tablespoons English pub mustard ( coarse grain mustard)
2 tablespoons drained capers
6 thick slices pepper bacon
6 ounces Stilton cheese
2 pounds ground beef ( 15% fat )
1/2 cup grated onion
3 tablespoons grated horseradish
2 cloves grated garlic
1/2 cup stout or dark ale
2/3 cup soft breadcrumbs
1 teaspoon sea salt
1/2 teaspoon fresh grated pepper
vegetable oil for brushing grill
6 1/2 inch slices beefsteak or form tomatoes
2/3 cup buttermilk
1/4 cup minced chives
2/3 cup dry breadcrumbs
salt and pepper to taste
6 slices sharp cheddar cheese (about 6 ounces )
6 good quality hamburger buns (homemade if possible )
6 leaves butter or Boston lettuce

 

Instructions

Preheat gas grill to medium high heat. In a bowl mix together mayonnaise, mustard and capers. Cover and set aside. Heat a large fire-proof skillet on the grill. Add bacon and cook until crisp. Set aside to keep warm. Remove all but 2 tablespoons bacon grease.Set frying pan aside. Divide stilton cheese into 6 round pieces. Set aside. In a large bowl combine ground beef, onion, horseradish, garlic, stout, breadcrumbs, salt and pepper. Form into 12 thin patties. Place 1 round of cheese on 6 patties and top with the other 6 patties pressing to seal cheese inside. Cover and set aside. In a bowl dip tomato slices in buttermilk. Place breadcrumbs and chives in a shallow dish. Dip tomato slices in crumb mixture. Heat frying pan on grill. Place tomato slices in pan and fry about 2 minutes on each side seasoning with salt and pepper. Place on a plate and cover to keep warm. Brush grill rack with oil. Place patties on the rack, cover and cook, turning once, until done, about 7 to 9 minutes on each side. Place cheese slices on top of each patty about 2 to 3 minutes before patties are done. Place the buns cut side down on the outer edges of the grill to toast about 2 minutes. Spread mayo mixture evenly on cut sides of buns. Then place patties and fried tomato slices on top. Top with bacon and lettuce and top of buns. Serve immediately. Makes 6 servings
