Steak Fajitia Burgers with Garlic Lime Butter

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

1 stick of unsalted butter, room temperature
1 lime, zested (reserve juice for fajitia topping)
4 cloves minced garlic (1 glove for butter mixture; reserving 3 cloves for hamburger mixture)
1/2 tsp. paprika
4 teaspoons kosher salt; 1 tsp for butter; 2 reserved for burgers; 1 tsp reserved for fajitia topping
6 Kaiser Buns/Rolls split
2 lbs. ground chuck remaining minced garlic cloves
1/2 can 4oz. green chilis, well-drained; finely minced
1 large white onion, 1/2 minced for burgers; the other half thinly sliced reserved for fajitias
1 TBSP chili powder
1 tsp ground cumin
1 TBSP freshly minced oregano
Reserved Salt
2 TBSP freshly ground black pepper; 1 TBSP for hamburger mixture:1 TBSP for fajitia mixture
1 small red pepper, thinly sliced
1 small green pepper, thinly sliced
Reserved sliced white onion
Reserved salt & Pepper
Reserved Lime Juice
6 slices provolone cheese
Oil for grilling

 

Instructions

To make Garlic Lime Butter: In a small mixing bowl combine room temperature butter, with the zest of one lime, minced garlic and paprika; salt. Take butter mixture and spread evenly on split Kaiser Buns/Rolls. Set aside. To make Burgers: In a large mixing bowl; combine ground chuck with remaining minced garlic, minced green chilis, minced onions,chili powder, ground cumin, oregano, reserved salt and ground pepper. Divide mixture into six equal portions and form the patties to fit your rolls. Chill until ready to grill. To make Fajitia Topping: Heat skillet on grilling surface and add oil to avoid vegetables from sticking. Add red peppers, green peppers and white onion to surface. Saute' approximately 5 minutes. Season with reserved black pepper and salt. You want vegetables softened; but still crisp. Add juice of reserved lime prior to removing from heat. Keep fajitia topping on warm surface or plate until ready to assemble burgers. To Cook Burgers: Brush the hot grill with oil. Place the prepared beef patties on the rack, cover, and grill until you see a nice grill mark about 3 or 4 minutes. Turn the patties and continue grilling approximately 5 to 7 minutes. During the last few minutes of grilling take your buttered kaiser rolls and add to hot surface; Watch the coals you don't want your buns to burn. Top each hamburger patty with 1/6 of fajitia topping and a slice of provolone cheese. Close grill and allow cheese to melt slightly over the patty. This is not the time to be chatting. Keep a careful eye on your buns and the check the burgers every few seconds. You want your buns toasted slightly and your cheese just melted. To assemble burgers: Place each hamburger on top of toasted kaiser buns and make sure you serve warm!
