Steak Burgers with Anchovy Mayonnaise

I am one of those odd folks that love anchovies, I look for them in my Caesar salad dressing when I eat out, and always get them on pizzas.
Funny thing about anchovies is that when you add them in things people that say they don’t like them say …yum what makes this so delish?
I have been making this mayo for years to put on roast beef sandwiches, next step was crowning a steakburger with this yummy mayo.

Ingredients:

Burger part:
11/2 pounds ground rib eye steak
1/2 pound ground sirloin steak
1/4 cup shallots, chopped finely
1/2 teaspoon each kosher salt and freshy ground black pepper

Anchovy Mayonnasie Part:
2 cups mayonnaise, home made is best here, recipe to follow if you want to do that.
2 ounce can anchovies, crushed and minced
2 teaspoon crushed garlic
2 hard cooked eggs, chopped
8 pitted kalamata olives, chopped
1 1/2 tablespoons capers, chopped
1 tablespoons lemon juice
1/2 teaspoon freshly ground black pepper

Home made Mayonnaise:
2 egg yolks
1 1/2 cups vegetable oil
1 tablespoons white vinegar
1/2 teaspoon Kosher salt

Bread:
6 sesame seed kaiser rolls

Cheese:
6 slices American cheese, each about 1 ounce

Toppers:
6 slices red onion
6 slices tomato
12 Boston Bibb lettuce leaves

Instructions:

Make mayonnaise first if you are going to use home made.
In a food processor whip one of the egg yolks.
Add the oil a drop at a time.
Keep adding oil a drop at a time, when almost all oil is incorporated add the second yolk then the vinegar, and then the salt.
Might as well keep using the food processor for the next part:
Add the Anchovy Mayonnaise ingredients and give a whirl or 2 to combine everything.
Cover and chill for at least 1 hour.
Next make the burgers by combining all burger ingredients.
Form into 6 patties..
Grill burgers on a pre heated med high grill until they are done to your liking, we like about 5 minutes per side.
Slice the rolls in half lengthwise.
The last 5 minutes of cooking, toast the cut sides of the buns, put 1 slice of cheese on each burger.
Cover to melt cheese.
Slather desired amount of Anchovy Mayonnaise on the top bun, we like about 2 tablespoons.
Put burger on the bottom bun, top with 1 slice onion, 1 slice tomato, and 2 lettuce leaves.
