Ingredients

4 Large yellow onions
1 stick unsalted butter
2 tablespoons extra virgin olive oil
1 teaspoon salt
1 teaspoon cracked black pepper
1 pound ground chuck
1 pound ground sirloin
1 package onion soup mix
2 teaspoons cracked black pepper
6 slices Gruyeres cheese
1 small package fresh Arugula leaves
1 cup mayonnaise
10-15 fresh basil leaves-depending on size
6 kaiser rolls

Instructions

To make the onions: Peel and slice 4 large onions. Add 1 stick unsalted butter and the olive oil to a sautee pan over medium heat. When the butter/oil mixture has melted together, add and sautee the onions until they are soft and translucent, about 15-20 minutes depending on cooking temperature. Set mixture aside to cool.
To make burgers: In a large mixing bowl combine both packages of meat, the onion soup mix and cracked black pepper until everything is well combined. Shape the meat into 6 equal size patties, making a small well in the center of each patty and adding 2 heaping tablespoons of the onion mixture to the center. Work the meat around the onions until all the onions are no longer showing. Over medium-high heat cook the burgers for approximately 5-7 minutes on each side (for medium) or until desired doneness is achieved. Towards the last few minutes of cooking add 1 slice of gruyere cheese on each burger so it melts. To make basil mayo: While the burgers are cooking, take the fresh basil leaves and chop them. Add the fresh basil to the mayonnaise and set off to the side. To assemble burgers split the kaiser roll in half and place the cooked burger on the roll. Add Arugula leaves. Take 1 tablespoon of the basil mayonnaise and spread it on the top bun. Put both sides together, eat and enjoy!
