SPICY YBOR BURGER WITH GRILLED CAPACOLA HAM ON TOASTY CUBAN BREAD

Ingredients:

OREGANO SAUCE

1 CUP MAYONNAISE
1 TABLESPOON YELLOW MUSTARD
3 TABLESPOONS FRESH CHOPPED OREGANO LEAVES

PATTIES

1 ½ POUNDS GROUND CHUCK
½ POUND GROUND PORK
½ CUP GRATED RED ONION
4 GARLIC GLOVES MINCED
2 TEASPOONS KOSHER SALT
1 TEASPOON GROUND BLACK PEPPER
1 PINCH SAFFRON
3 TABLESPOONS CABERNET SAUVIGNON

VEGETABLE OIL, FOR BRUSHING ON THE GRILL RACK
6 MED. THICK SLICES CAPACOLA HAM
6 MED. THICK SLICES GENOA SALAMI
6 SLICES SWISS CHEESE
12 DILL PICKLE SLICES
1 LOAF UNSLICED CUBAN BREAD
MELTED BUTTER, FOR BRUSHING THE BREAD

DIRECTIONS
PREPARE A MEDIUM-HOT FIRE IN A CHARCOAL GRILL WITH A COVER, OR PREHEAT A GAS GRILL TO MEDUIM-HIGH

TO MAKE THE OREGANO SAUCE, COMBINE THE MAYONNAISE, MUSTARD AND OREGANO IN A SMALL BOWL AND MIX WELL. COVER AND REFRIGERATE UNTIL NEEDED.

TO MAKE THE PATTIES, COMBINE THE CHUCK, PORK, ONION, GARLIC, SALT, PEPPER , SAFFRON AND SAUVIGNON IN A LARGE BOWL. HANDLING THE MEAT AS LITTLE AS POSSIBLE TO AVOID COMPACTING IT, MIX WELL. DIVIDE THE MIXTURE INTO 6 EQUAL PORTIONS AND FORM INTO PATTIES THE SIZE OF A HAMBURGER ROLL.

WHEN THE GRILL IS READY, BRUSH THE GRILL RACK VEGETABLE OIL. PLACE THE PATTIES ON THE RACK, COVER AND COOK, TURNING ONCE, UNTIL DONE TO PREFERENCE, 4 TO 6 MINUTES ON EACH SIDE FOR MEDIUM. DURING THE LAST 2 MINUTES OF COOKING PLACE THE SLICES OF HAM AND SALAMI ALONG SIDE THE PATTIES TURNING ONCE AFTER COOKING FOR 30 SECONDS. PLACE THE CHEESE ON THE BURGERS DURING THE FINAL 1 MINUTE OF COOKING. REMOVE THE BURGERS, HAM AND SALAMI FROM THE GRILL. COVER WITH FOIL TO KEEP WARM WHILE GRILLING THE BREAD. TAKE THE WHOLE LOAF OF BREAD AND BRUSH LIGHTLY WITH THE MELTED BUTTER. PRESS DOWN ON THE BREAD WHILE IT IS GRILLING ON ALL SIDES UNTIL LIGHTLY TOASTED, THEN REMOVE. CUT THE LOAF INTO 6 PORTIONS TO FIT YOUR BURGERS. SLICE EACH PORTION OF THE BREAD MAKING SURE YOU DO NOT SLICE ALL THE WAY THROUGH.

TO ASSEMBLE THE BURGERS, SPREAD THE OREGANO MIXTURE ON THE CUT SIDE OF THE BREAD. ON THE BOTTOM, PLACE THE BURGER, SALAMI SLICE, HAM SLICE AND TWO PICKLE SLICES. CLOSE THE TOP AND SERVE!
