Spicy Southwest Burgers with Honey Chipotle Dressing

Want a burger full of flavor, and packed with spice, then this recipe is for you! Goes great with spanish rice, guacamole, and even simple salsa and chips. This burger will have your family, friends, and neighbors begging for more.


1 1/2 lbs. Ground Chuck
3/4 lb Chorizo Sausage
1/4 cup Red Onion, diced
1 Tbsp. minced garlic
3 Tbsps cilantro
1 Tsp. Sea Salt
1 1/2 Tsps. Ground Cumin
1/4 tsp. cayenne pepper
3 roasted poblano peppers, peeled and chopped
2 eggs
1 1/2 cup plain bread crumbs
1/2 Cup Mayonnaise
2 tsps. course ground mustard
2 Tbsps. honey
1 Tbsps. Chopped chipotle peppers (in adobe sauce)

1.Prepare grill by coating with nonstick spray. 2. Heat Grill to medium temperature 3. Place poblano peppers on gril for approximately 4-5 minutes or until skin is charred evenly over the peppers. 4. Remove peppers from heat and place in a brown paper bag 5. In a large nonreactive metal bowl, mix the following ingredients together: Ground Chuck, Chorizo Sausage, red onion, garlic, cilantro, sea salt, ground cumin, & cayenne pepper. 6. Remove peppers from bag and remove charred skin from pepper. Cut out stem and remove seeds. Dice pepper into small pieces. 7. Add diced pepper to burger mixture, along with eggs and bread crumbs. 8. Mix burger mixture well so that all ingredient are incorporated well. 9. Form into patties and grill over medium heat for approximately 25-35 minutes or until done being careful of flare-ups that may occur. Remove from heat and let rest while dressing is prepared. Dressing 1. In a medium nonreactive bowl mix together mayonnaise, mustard, honey,& chipotle peppers with a whisk. To serve: Place burger on a kaiser bun with a dollap of honey chipotle dressing. Garnish burgers if desired


Garnish is optional, can serve these burgers with a slice of avocado, tomato and lettuce leaf. Additionally, if cheese is requested, use anejo.
