Ingredients

CAJUN MAYO:
1 C. MAYONNAISE
1/4 C. JALAPENO, MINCED
1/4 C. CHILI SAUCE
SPICY RUB:
1 C. SEAFOOD SEASONING
1 TBS. GROUND CUMIN SEED
1 TBS. CAYENNE PEPPER
CARMELIZED ONIONS:
1 TBS. VEGETABLE OIL
2 LARGE SWEET ONIONS, THINLY SLICED
PATTIES:
1 1/2 POUNDS HALIBUT FILLETS,COARSELY CHOPPED
2 GREEN ONIONS, THINLY SLICED
2 MED. EGGS, LIGHTLY BEATEN
1 C. PANKO
1 TBS. STEAK SEASONING
VEGETABLE OIL, FOR BRUSHING GRILL
6 KAISER ROLLS, SPLIT
2 LG. RIPE TOMATOES, SLICED
6 LG. GREEN LEAF LETTUCE LEAFS

 

Instructions

PREPARE A MEDIUM-HOT FIRE IN A CHARCOAL GRILL, OR PRE-HEAT A GAS GRILL TO MEDIUM-HIGH. TO MAKE CAJUN MAYO, PLACE MEASURE MAYONNAISE IN A SMALL MIXING BOWL, SET ASIDE. USING A VERY SHARP KNIFE SPLIT AND SEED JALAPENOS, THEN MINCE AND ADD TO MAYONNAISE. STIR IN CHILI SAUCE AND MIX WELL. REFRIGERATE UNTIL JUST BEFORE SERVING. FOR SPICY RUB, COMBINE TOTAL MEASURED AMOUNTS OF SEAFOOD SEASONING, CUMIN SEED, AND CAYENNE PEPPER. PLACE MIXTURE ON A LARGE PLATTER AND SET ASIDE. TO MAKE CARMELIZED ONIONS, PLACE THE VEGETABLE OIL IN A 10-INCH NON-STICK FIRE PROOF SKILLET, ADD SLICED ONIONS AND COAT EVENLY WITH OIL. PLACE SKILLET ON GRILL RACK. COVER AND COOK FOR APPROXIMATELY 15 MINUTES. CHECK OFTEN AND STIR OCCASSIONALLY UNTIL ONIONS ARE SOFT AND GOLDEN. REMOVE PAN FROM GRILL AND SET ASIDE WITH LID STILL ON SKILLET TO KEEP WARM. TO MAKE THE PATTIES, PLACE COARSELY CHOPPED HALIBUT IN A LARGE MIXING BOWL. ADD THINLY SLICE GREEN ONION (WHITE AND GREEN PARTS), LIGHTLY BEATEN EGG, PANKO, AND STEAK SEASONING. MIX BY HAND GENTLY. DIVIDE THE MIXTURE INTO SIX EVEN PORTIONS AND FORM PATTIES WHICH WILL FIT THE KAISER ROLLS. SET EACH PATTY GENTLY IN THE PAN WITH THE SPICY RUB AND TURN TO COAT EACH SIDE. SET PREPARED PATTIE ASIDE. BRUSH THE GRILL RACK WITH VEGETABLE OIL. USING LONG TONGS AND A FOLDED PAPER TOWEL DIPPED IN OIL WORKS WELL. PLACE PATTIES ON THE GRILL RACK AND COOK UNTIL DONE, 4 TO 5 MINUTES ON EACH SIDE, TURNING ONLY ONCE. AFTER TURNING THE PATTIES, PLACE KAISER ROLLS ON GRILL RACK TO LIGHTLY TOAST. TO ASSEMBLE, SPREAD CAJUN MAYO ON BOTH SIDES OF TOASTED ROLLS. PLACE A HALIBUT PATTY ON EACH OF THE BOTTOM ROLLS. TOP WITH CARMELIZED ONIONS, TOMATO SLICES, LETTUCE AND TOP OF ROLL AND SERVE.
