Spicy Fiesta Bean Burger

Ingredients

-15oz can of Red Kidney Beans
-Half of a 15oz. can of Vegetarian Refried Beans
-Half of a 15oz. can of Pinto Beans
-Half of a cup of onion, roughly chopped
-Half of a cup of sweet Bell Pepper,such as red,yellow or orange, roughly chopped
-Cup of steamed carrots
-Half of a can of Mexican tomatoes with lime and cilantro,drained
-Cup of Panko(Japanese Bread Crumbs)
-Half of a cup of all-purpose flour
-Tbls. of good Chili Powder
-Tsp. salt
-Half of a Tsp. of Black Pepper
-Half of a Tsp. Cayenne Pepper
Condiment Ingredients-
-2 Tbls. of Mexican Spice Mix
-One Quarter of a cup of mayonaise
-Three Quarters of a cup of Sour Cream
-Mix all ingredients and refridgerate

 

Instructions

Mix all of the Patty ingredients, except for the Pinto Beans in a Food Processor until well blended. Fold in the Pinto Beans. Chill mixture in the fridge for about an hour, or until it is a little easier to handle. The mixture will be sticky. To form patties, lay out a sheet of wax paper and place six portions out on it. Form the patties as best as you can, it will be a little messy.It helps if you sprinkle a little flour on the wax paper first, then the patties won't stick so much. These can be frozen, or used immediately. Preheat the grill to 400 degrees. When the grill is hot, lightly oil the surface with any light oil or a nonstick spray (stand back if using spray,it will flare up ). Patties will slide off of paper and onto grill fairly easily. Cook for about three minutes on each side.
