Spicy-Cool Curried Burgers

My mother grew up in Michigan but spent her teenage years living in Bombay, India. As a result, my relatives and I eat Indian food for special occasions including Easter and Christmas. This recipe was created with our love of Indian food in mind.

Ingredients 

Tomato-Cucumber Raita
½ a cucumber
1 Roma tomato
1 cup thick Greek-style yogurt
¼ cup cilantro, minced
1½ t lemon juice
½ t salt
Patties
1½ lbs ground Angus chuck
½ lb ground lamb
1 -inch piece fresh ginger
2 cloves garlic
½ cup red onion
1 jalapeno
½ cup cilantro
2 T mild curry paste
Zest and juice from 1 lemon
¼ cup Greek-style yogurt
Charred vegetable mango chutney
Oil for grill
1 small red onion, halved
1 green or red jalapeno
1 Roma tomato
1 jar chutney
1 t curry paste
6 store-bought naan, cut in half, depending on size
* Oil to brush on naan

Instructions 

• Prepare a medium-hot fire in a charcoal grill or preheat gas grill. • Peel and deseed cucumber. Grate the cucumber and squeeze out all the water. Deseed and finely chop tomato. Whisk cucumber, tomato, yogurt, cilantro, lemon juice, and salt until well blended. Set aside until ready to use. • Place ground chuck and lamb in a bowl. In food processor, mix fresh ginger, garlic, red onion, jalapeno, cilantro, curry paste, zest and juice from 1 lemon, and yogurt until paste forms. Thoroughly mix processed vegetables with ground meat, but be sure to handle meat gently. Set meat mixture aside. • Brush the grill rack with oil. Place red onion halves, jalapeno, and tomatoes on grill. Grill vegetables for five-ten minutes, turning frequently, until they are lightly charred. Tomato will be done several minutes before the other vegetables. Place vegetables in food processor. Add chutney and curry paste. Pulse food processor until mixture is blended. • Brush the grill rack with oil. Roll meat mixture into a log, and cut log into six even pieces. Form into patties. Grill patties 3-5 minutes until brown on one side. Grill for an additional 3-5 minutes. During the last few minutes of cooking, grill naan, brushed lightly with oil, until toasted. • Spread chutney on one side of grilled naan half. Top with beef patty, raita and the other grilled naan half.
