Spicy Chorizo Turkey Burger with Sweet Applesauce Relish Mayonnaise and Mozzarella Cheese

1/2 lbs. Chorizo Sausage

Instructions

To prepare Applesauce Relish Mayo: In large bowl combine the mayonnaise, applesauce, sweet relish and Grey Poupon mustard. Wisk in 2 tablespoons of worcestershire sauce. Add 1 teaspoon of salt and 1 teaspoon of pepper. Wisk again and set aside until burgers are done. To Prepare Mozzarella Cheese: Cut the tomatoe into 6 slices. Sprinkle the tomato slices with 1 teaspoon of salt and 1 teaspoon of pepper. Place 1 leaf of Spinach on top of each tomato slice. Cut the Mozzarella Ball into 6 slices. Place 1 slice of mozzarella on top of each spinach leaf. Drizzle the mozzarella with 1/2 cup of Balsamic Vinegar and 1 tablespoon of Colavita Extra Virgin Olive Oil. Set aside until burgers are done. To prepare Chorizo Turkey Burgers: Put 2 lbs of ground turkey in large bowl. Remove casing from chorizo sausage. Crumble chorizo sausage into the bowl with the ground turkey. Mix turkey and chorizo together with your hands, well. Pour 1/2 cup Worcestershire sauce on top of turkey mixture. Pour 1/2 cup Sutter Home Chenin Blanc on top of turkey mixture. Mix the turkey mixture slightly with your hands again, just to make sure the worcestershire sauce and Chenin Blanc is mixed in well. Form the ground turkey into 6 turkey patties. Sprinkle 1/2 teaspoon of salt and 1/2 teaspoon of pepper on one side of the turkey patties. Flip patties over and sprinkle 1/2 teaspoon of salt and 1/2 teaspoon of pepper on the other side of the burgers. Brush the grill rack with vegetable oil to keep burgers from sticking. Place the turkey patties on hot grill. Cover the grill and cook each patty for 6 minutes on 1 side. Flip the patties over and cook for 6 more minutes on the other side. Brush inside of each wheat bun with a little olive oil. Place oil half of bun down on hot grill for 2 minutes. Remove buns and spread each bottom half of the bun with the Applesauce relish mayonnaise. Place 1 turkey patty on top of each bun bottom. Top each patty with 1 mozzarella, spinach, tomato slice. Place the top bun on top of the mozzarella. Eat immediately and enjoy!
