Spicy Buffalo with Tasty Stuff-alo

Ingredients

Patties:
2.5 lbs ground buffalo meat
3 Jalapeno peppers
3 Serrano chili peppers
1/3 cup chopped red onion (approx 1/4 red onion)
1/4 cup fresh cilantro, divided
6 large garlic cloves
1/2 cup Sutter Home cabernet sauvignon
3 Tbs hot sauce
1.5 Tbs salt
1.5 Tbs freshly ground black pepper
Avocado Mayo:
2 avocados
5 Tbs mayo
Zest of 1 lime
Vegetable oil, for brushing on grill rack
6 slices pepper jack cheese
6 Kaiser Rolls

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To prepare the patties: Place buffalo meat in large mixing bowl. Clean, seed and finely chop jalapeno peppers. Add to meat Clean and finely chop Serrano chili peppers. Add to meat. Finely chop approximately ¼ red onion. Add to meat. Finely chop cilantro. Add half to meat, reserve remaining in smaller bowl. Peal and finely chop garlic cloves. Add to meat. Mix meat mixture thoroughly until ingredients are spread evenly. Avoid compacting meat. Add cabernet sauvignon and Tabasco, salt and black pepper. Mix well. Separate meat mixture into 6 even parts. Form each into round patty approximately 1.5 inches thick. To prepare the avocado mayo: Cut open avocados, remove pit and scoop into bowl with remaining cilantro. Add mayo to avocados and mash together. Zest rind of lime and add to avocado mayo. Mix well. Brush grill with oil. Place each patty on grill. Cook 5 minutes on one side. Flip burger. Cook another 4 minutes. Place 1 slice of cheese on each burger and cover grill 1 minute before removing from heat. Burger should be medium rare. Cut open Kaiser Rolls. Grill approximately 30 seconds on each side. Remove from grill and spread avocado mayo generously on cut side of top bun. Place cooked burger on lower toasted roll, cover with top. Serve immediately.
