Spicy Avacado Burgers

This burger is anything but ordinary. With a kick of chilies and a cooling twist of avocado and lime, your mouth will be begging for more!

Ingredients 

1.5 LBS Ground Beef (80% lean)
3 medium size avocados
2 medium lime
6 medium green chilies roasted
1 tsp salt
1.5 tsp fresh ground pepper
1 medium red onion
2 loaves organic country italian bread
1 TBSP miced Garlic
1/2 cup of mayonaise
1 bag arrugala lettuce
2 medium ripe tomatoes sliced
4 slices pepper jack cheese

Instructions 

Mix 1.5 lbs ground beef with 2 avocados chopped. Mix gently with your hands, you don't want to mash up the avacaods too much. Add the zest of one lime to the mix along with the juice of half the lime. Make sure to strain the juice with your hand to catch the seeds. Chop 4 of the chillies and add to the mix. Add the salt and pepper. Mix the ingredents again with your hands, gently. Divide your mixture into four portions. Make four round patties, don't flatten the patties, you want them plump. Cut onion into 1/4 inch thick slices. Slice your bread into 1 inch thick slices. You will need 8 slices. Avoid using the end pieces, they don't grill well. Cut your remaining green chilies in half. You want 4 pieces. In a bowl zest one lime and juice both limes. Remember to catch the seeds. Add 1 TBSP of garlic. Mix with a spoon. Add a tiny pinch of salt and a grind of pepper, for taste. Brush each side of your bread with the sauce. Use spearingly, you don't want the bread to be soggy when it goes on the grill. Once all 8 peices are sauced, add 1/2 cup of mayonaise to the remaining lime and garlic mix. Mix well! Once everything is preped place your burgers on the grill. Don't move the burgers once they are on the grill, you want to get pretty grill marks. Let them cook on each side for about 5-8 minutes, depending on the heat of your grill. Before you remove your burgers, place one slice of cheese on each. Let set for about 45 seconds, just long enough to let the cheese start to melt. While your burgers are cooking place the onions on the grill for about 3 minutes on each side. You want to maintain the crunch of the onion, but give them the smokey flavor of the grill. Place each piece of bread on the grill for about 3 minutes on each side. You want grill marks on the bread and you want it to be perfectly toasted. Once everything is off the grill assemble the burgers. Take one piece of bread and spread a not-so-thick-but-not-so-thin layer of mayonaise on one side of bread. Take a half handful of lettuce and place on the mayo, it will help keep the lettuse put! Take 1/2 of a green chilie and lay it on the lettuce. Place the burger on top, cheese side up. Then add a slice of onion and a slice of tomato. Brush a small amount of mayo on the other piece of bread and place on top! Cut in half and enjoy!
