Ingredients

1/2 Cup Sour Cream
4 Tablespoons Fresh Cilantro (finely chopped)
2 Tablespoons Fresh Garlic (finely minced)
3 Teaspoons Kosher Salt
1-1/2 cup Iceberg Lettuce (finely chopped)
1-1/2 cup Tomato (diced)
2 Tablespoons Fresh Lime Juice
2 lb. Ground Beef Sirloin
1- 7oz can Chipotle Peppers in Adobo Sauce (pureed)
14 Corn Tortillas 
12 slices Pepper Jack Cheese
6 1/4" slices of Red Onion
2 Tablespoons Unsalted Butter (melted)
6- Potato Hamburger Buns (slightly pressed, to flatten)

 

Instructions

To make Cilantro, Garlic Spread Mix 1/2 Cup Sour Cream 1 Tablespoon Fresh Cilantro(chopped) 2 Teaspoons Garlic (finely minced) 1/2 Teaspoon Kosher Salt Chill, until later use. To make Lettuce Works Mix 1-1/2 Cup of Iceberg Lettuce (finely chopped) 1-1/2 Cup Tomato (diced) 6 Teaspoons Lime Juice (freshly squeezed) 1/2 Kosher Salt Toss gently and chill, until later use. Preheat gas grill to medium heat. To make Hamburger Patties Place into a glass bowl; 2 pounds of Ground Beef Sirloin 1- 7 ounce can of Chipolte Peppers in Adobo Sauce (pureed in food processor) 2 Tablespoons Fresh Cilantro (chopped) 2 Corn Tortillas (cut into 1/4" squares) 1 Tablespoon Fresh Garlic (minced) 2 Teaspoons Kosher Salt Mix gently, first with a wooden spoon, then mix quickly with hands to form 6 equal size balls, place onto parchment paper flatten slightly and press with a rolling pin or cast iron skillet, until approximately 1/4" thick. Coat grill with vegetable oil. In an oven proof sauce pan, melt; 2 Tablespoons of Butter 1 Tablespoon Fresh Cilantro (finely chopped) 2 Teaspoons of Freshly squeezed Lime Juice 1 Teaspoon Fresh Garlic (finely minced) Set aside to keep warm. Place patties over direct heat on grill and cook for 2 1/2 minutes. Turn gently and place 2 slices of cheese (criss crossed) onto each patty. Top each patty with one slice of red onion. Cook an additional 2 minutes. Set aside to keep warm. Brush one side of 12 tortillas with melted butter mixture and grill until toasted. Brush opposite side with butter and turn until toasted. Stack and set aside, to keep warm. Brush the outside of each slightly flattened hamburger bun with the butter mixture and heat on grill, until toasted. Brush opposite sides with butter mixture and turn, until toasted. To assemble the burgers, spread Garlic, Cilantro Spread on each side of bun. Place Lettuce Works on each side of bun. Place grilled tortilla on each bun. On each bun bottom, place a patty. Add bun tops and serve.
