Southern Star Quesadilla Burger
Oklahoma... a nice mix of a little plains, a little southern, and a little tex-mex. Lawton is about 45 minutes from the Texas border so when I thought of what kind of food best represented Oklahoma, I immediately thought of tex-mex inspired dishes. And this burger has a little tex-mex, the avacado sauce and tortillas, and a little southern with the bacon and ranch dressing.
2 LBS Ground Chuck
2 T. McCormick Grill Mates Montreal Steak Seasoning
1 C seeded and diced roma tomato (approx. 2 tomatoes)
1/2 C finely diced red onion
1 small ripe avacado diced
Juice of 1 lime
1 Clove garlic, finely chopped
2 T fresh cilantro chopped
2 T Light Corn Syrup
1 Jalepeno diced (seeds removed to preference)
sprinkle of salt to taste
2 T Fiesta Ranch dip mix from 1.1 oz pkg
8 oz Sour Cream
12 Fajita size flour tortillas
4 1/2 oz can chopped ripe olives
12 slices pre-cooked bacon from package
4 C shredded colby/monterry jack cheese blend
Buttered flavored non-stick cooking spray
Prep Time: 55 Minutes
Cook Time: 25 Minutes
Pre-heat gas grill to med-high
-Mix meat with seasoning and form into six flat patties approximately size of tortillas. set aside until ready to grill.
-Mix together all ingredients for avacado sauce . Being sure to mash avacado while stirring. Refrigerate until ready to assemble burger.
-Mix together ranch mix and sour cream. Refrigerate until ready to serve.
-Grill burgers for 5 to 7 minutes per side, only flipping once for medium. (adjust cooking time for meat preference) Remove from grill. Place bacon on grill for 1-2 minutes to heat through. Remove.
-Take six "bottom" tortillas and top with 1/3 c cheese, 2 T chopped olives and 2 slices of warmed bacon torn in half horizontally. Place 1 burger pattie on each. Top with 2 T of avacado sauce and an additional 1/3 c cheese. Top with remaining six tortillas. Spray tortillas with cooking spray and return to grill for 3-5 minutes per side, until cheese is melted and tortillas are lightly browned. Remove from grill.
- Remove "bottom" tortilla and add 2 T ranch sauce. Replace tortilla.
May be easier to eat if cut in half. Simply Divine.
