Smokin Chipotle Orange Glazed Turkey Burger with Feta Spread and Sweet Potato-Jicama Slaw

Ingredients:

Sauce

1 cup sour cream
1 cup crumbled feta cheese
2 teaspoons Tabasco Smoked Chipotle Sauce

Slaw

1 cup julienned sweet potato
1 cup julienned jicama
1 cup julienned sweet red bell pepper
1 finely minced green onion
1 tablespoon chopped fresh cilantro
1/2 cup orange juice
3 tablespoons white vinegar
1/2 teaspoon salt
1 teaspoon Tabasco Smoked Chipotle sauce

Glaze
1/2 cup orange marmalade
1 teaspoon Tabasco Smoked Chipotle Sauce

Patties

1/3 cup chopped fresh cilantro
1/2 cup minced green onion
1 tablespoon Tabasco Smoked Chipotle Sauce
1/2 cup orange juice
1 egg
1 teaspoon salt
1 teaspoon coarsely ground black pepper
2 pounds ground turkey
1 tablespoon vegetable oil for brushing on grill rack
6 Kaiser rolls, split

Instructions:

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high heat. To make spread, combine sour cream, feta cheese and chipotle sauce. Mix well and set aside. To prepare slaw, combine sweet potato, jicama, red bell pepper and onion, mixing well. Mix together well the cilantro, orange juice, vinegar, salt and chipotle sauce. Pour over the vegetable mixture and toss well. Set slaw aside. To make glaze, combine orange marmalade with chipotle sauce in a fireproof small saucepan and place on grill rack. Stir until glaze is melted and easy to stir. Remove saucepan from grill and set aside. For patties, combine cilantro, onion, chipotle sauce, orange juice, egg, salt and pepper. Mix well. Place ground turkey into large mixing bowl and pour spice mixture over turkey. Mix well with a fork. Divide mixture into 6 equal portions and shape into patties. Brush oil onto grill rack and place patties on grill. Cover and cook for 5-7 minutes. Remove cover, turn patties and return cover and cook for an additional 5-7 minutes. Remove cover and brush orange chipotle glaze on patties. Remove patties and set aside. Place split rolls cut side down onto outside edges of grill rack and toast lightly. While rolls are toasting, remove slaw vegetables from dressing with a slotted spoon and drain on paper towels. To assemble burgers, spread feta spread onto cut sides of rolls. Place 1/4 cup of slaw on bottom roll, place turkey patty on top of slaw and top with roll top.
