Smoked Spanish Paprika Burger with Mancheego Cheese, Avocados, & Piquillo Pepper Aioli

I created this burger after I had purchased some smoked Spanish paprika & was experimenting with ways to use it. I decided to try it in some ground chuck to make some burgers, & then I experimented with other ingredients. Researching some Spanish cookbooks helped me come up with condiment ideas, & this is the end result.

Ingredients 

Piquillo Pepper Aioli:
1 cup good quality mayonnaise
1/3 cup bottled piquillo peppers, drained & chopped
2 tablespoons fresh lemon juice
2 garlic cloves, crushed in garlic press
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
Patties: 2 pounds freshly ground chuck
1 1/2 teaspoons smoked Spanish paprika
2 teaspoons sea salt
1/2 teaspoon freshly ground black pepper
vegetable oil for brushing grill rack
6 4-inch long ciabatta loaves, split
6 slices Mancheego cheese
18 thin California avocado slices

Instructions 

Preheat gas grill to medium-high heat or prepare a medium-hot fire in a charcoal grill with a cover. To make piquillo pepper aioli combine the mayonnaise, piquillo peppers, lemon juice, garlic, olive oil, & sea salt in a medium sized bowl & mix well. Refrigerate until ready for use. To make the patties combine the ground chuck, smoked spanish paprika, sea salt, & ground black pepper in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions & form the portions into patties to fit the ciabatta loaves. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, & cook, turning once, until done to preference, 5-7 minutes on each side for medium. Check with a meat thermometer, through the center or side of the patties, to assure a temperature of 160 degrees. During the last few minutes of cooking, place the ciabatta loaves, cut side down, on the outer edges of the grill rack to toast lightly. During the last 2 minutes of cooking, place the mancheego cheese on the patties to melt. To assemble the burgers, spread the aioli over the cut sides of the top & bottoms of the ciabatta loaves. On each roll bottom, place the meat patty containing the melted cheese, & add 3 avocado slices to the top of each patty. Add the loaf tops & serve immediately. Makes 6 burgers.
