A simple "quality" burger made with fresh ingredients.
ground beef fresh ground the same day, 15% fat +-.(not the lean stuff) ask for product that includes some of the lesser cuts like neck and shank plus whatever the butcher has. Best if ground only once. Kosher salt
sliced cheddar cheese
sliced sweet onion
burger dill pickles
soft butter buns
form 1/3 pound patty 3/4 in thick, add dusting of kosher with fingers, pepper allow to rest at room temp for 20 minutes grill on hot grill for 5 minutes with lid down, open grill - turn burgers, add cheese (fold to avoid overhang melt), place bun bottom on burger and bun top on the backside of the bottom. Close grill for 3 - 4 min (depending on grill) internal temp of 145. Remove and serve, temp will rise after grilling. offer onions,pickels, mustard and ketsup
