RECIPES: Recipe Details
My grandmother used to put raisins in her meatballs. At the time, I thought the idea was a bit strange, however, as I grew older I began to appreciate the taste. Hopefully you will like the combination as much as my family does.
(1) 1 1/2 pound sweet italian sausage, casting removed.
(2) 1/2 cup red pepper, finely chopped
(3) 1/4 cup balsamic vinegar
(4) 3 tblsp raisins
(5) 2 tblsp olive oil
(6) 2 large yellow onions
(7) Salt and Pepper to taste
(8) 4 slices of provolone cheese
(9) 4 Kaiser rolls
Place the raisins in a small bowl. Bring balsamic vinegar to a boil. Remove from heat and pour over raisins. Cover and let sit 5 minutes. Place the chopped red pepper and sausage in a large bowl. Remove cover from raisins and drain. Place the raisins in the red pepper and sausage bowl. Combine and mix together. Form sausage mixture into 4 patties. Heat grill to medium. In small frying pan, saute onions in olive oil over medium heat until carmelized. Add salt and pepper to taste. Grill sausage patties over medium heat until cooked through. About 2 minutes before they are finished cooking, place a slice of cheese over each pattie to allow for melting. Cut Kaiser rolls in half. Toast each on the grill. Place sausage pattie on top of the bottom half of the roll. Top with onions and other half of the roll.
I like to serve this with some grilled eggplant and feta cheese on the side.
