SHUFFLE OFF TO BUFFALO BURGERS (Buffalo Chicken Burgers with Avocado and Maytag Blue Cheese Buttermilk Dressing)

Ingredients

1 Tbsp. PLUS 1 tsp. Red Wine Vinegar
2 Cloves Garlic, Minced
1 tsp. Grey Poupon Mustard
1/4 tsp. Worcestershire Sauce
1/4 tsp. White Pepper
1/4 tsp. Onion Salt
3/4 cup mayonnaise
1/3 cup buttermilk
5 oz. Maytag Blue Cheese, Crumbled
3 Sticks softened Butter
1/2 cup Tabasco Sauce
3 T. Brown Sugar
2 T. Chili Sauce
1 T. Balsamic Vinegar
3/4 tsp. Paprika
1/2 tsp. Kosher Salt
1/2 tsp. Cayenne Pepper
2 lbs. boneless, skinless, chicken thighs coarsely ground
1/2 lb. boneless, skinless, chicken breasts coarsely ground
1/2 cup Japanese Panko Crumbs
2 T. Hidden Valley Original Ranch Seasoning and Dressing MIX (powder)
1 1/2 cups wing sauce ( that you just prepared with the above ingredients)
Colavita Canola Oil for Brushing the grill
6 Fresh Kaiser Rolls
6 Tbsp. Maytag Blue Cheese, Crumbled
6 Crisp Romaine Leaves
2 Ripe Avocados sliced
Wing Sauce for Brushing on the Kaiser roll top

 

Instructions

Preheat a gas grill to medium-high.

TO PREPARE THE BLUE CHEESE BUTTERMILK DRESSING: Place the vinegar in a mixing bowl. Add the minced garlic, the mustard, the Worcestershire sauce, the white pepper and the onion salt. Whisk in the mayonnaise and then thin the dressing with the buttermilk. Add the blue cheese and whisk well. Place in the refrigerator until ready to use.

TO PREPARE THE WING SAUCE:
Put the butter in a mixing bowl. Add the Tabasco sauce, the brown sugar, the chili sauce, the balsamic vinegar, the paprika, the kosher salt, and the cayenne pepper. Whisk the ingredients together well and set aside until ready to use.

TO PREPARE THE PATTIES:
Put the ground chicken thighs and breast meat into a large mixing bowl. Using your hands, mix the chicken well. Add the Panko and the Hidden Valley dressing mix and mix well again. Add the wing sauce and mix well again making sure the ingredients are well combined. Form the mixture into 6 patties.

TO GRILL THE BURGERS:
Brush the grill rack with the canola oil. Place the patties on the grill. Cover the grill and cook for 5-6 minutes. Flip the burgers over, cover, and cook for an additional 5-6 minutes or until the juices run clear from the burger when stuck with the point of a knife.

In the last 2-3 minutes of grilling, brush the Kaiser rolls with a little oil and place face down around the outside of the grill to slightly toast.

TO ASSEMBLE THE BURGERS:
Place a Kaiser roll bottom on a plate. Place a burger on the roll and top with 1 Tablespoon of crumbled Maytag Blue Cheese. Place a romaine leaf on top of the crumbled blue cheese and put about 2 Tablespoons of blue cheese dressing onto the lettuce. Place a few slices of avocado on top of the dressing. Brush some wing sauce on the top of the bun and cover the burger.
