Shrimp Cocktail Burgers
This burger was created when I was invited to a burger-off barbeque. I went grocery shopping to look for inspiration, and there was a man giving out cocktail sauce samples, and it hit me- Shrimp Cocktail Burgers!! The puff pastry bun is just a little addition in honor my my friends, who contstantly joke that I will include puff pastry in anything...turns out, they were right!!
1-1/3 lb ground beef or ground sirloin
8 large shrimp, steamed, peeled, and chopped into a small dice
3 Tbsp prepared horseradish
3 Tbsp ketchup
2 tsp hot sauce
zest of 1/2 lemon
salt and pepper
5 squares of puff pastry, about 3 inches square
With clean hands, mix first five ingredients together until just combined. Form into burgers, four or five depending on how large you want them. Grill over medium heat approximately 5 minutes per side. Meanwhile, bake the pastry squares at 350 for 12 minutes. While still hot, split them in the middle like buscuits to be used as buns. Top prepared burgers with lettuce, tomato, bacon and cocktail sauce...delicious!
This burger has never failed to surprise people with how moist and delicious it is. For extra spice, include extra horseradish or hot sauce.
