Serious Citrus Burger – Serves 6

Pairs well with:

Pinot Grigio

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Ingredients:

½ orange, seeds removed, chopped + 2 tbsp crushed
¼ pink grapefruit, seeds removed, chopped
½ lime, seeds removed, chopped
¼ lemon, seeds removed, chopped
2 Tbsp sugar

3 Tbsp mayonnaise
5 Tbsp crushed citrus mix
1 tsp sugar

1 ¼ lb 85% lean ground beef, seasoned with ½ tsp salt and ¼ tsp black pepper
¼ lb ground pork
¾ cup plain breadcrumbs
2 Tbsp lemon zest
3 Tbsp sweet onion, minced
2 Tbsp sugar

3 Tbsp vegetable oil, for brushing grill
6 rolls, lightly toasted
6 leafs green leaf lettuce

Instructions:

1. Preheat grill to medium high.
2. In a medium bowl, combine chopped citrus. Sprinkle with 2 Tbsp sugar; blend.
3. In a separate medium bowl, lined with paper towels, place citrus mixture and cover with paper towels; Set aside. (Reserve 5 Tbsp for sauce).
4. In a small bowl, make sauce: combine mayo, 5 Tbsp citrus mixture, and 1 tsp sugar. Set aside.
5. In a medium bowel, mix beef with pork, breadcrumbs, lemon zest, citrus mixture, sweet onions, and 2 Tbsp sugar; form into 6 patties.
6. Brush grill with vegetable oil, grill burgers 2 minutes each side, twice.
7. Remove from grill and place on toasted roll bedded with lettuce, topped with sauce.
