Seattle Style Sushi Bar Burgers

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Being close to the Pacific coast means being able to find really fresh fish and seafood therfore it is easy to fall in love with sushi.There are tons of sushi establishments to choose from there is even one at Portland’s airport and at the Seattle Mariners stadium so why not make a local burger that is sushi style.

Ingredients:

2 teaspoons vegetable oil
2 teaspoons sugar
1/3 cup rice vinegar
1/2 cup paper thin slice English cucumber
1/4 cup paper thin sliced radishes
1/2 cup mayonnaise
1/2 cup cubed peeled California avocado
1 teaspoon wasabi paste
2 tablespoon rough chopped pickled ginger
1-1/2 tablespoons fresh lime juice
1/4 cup chopped cilantro
1 teaspoon sea salt
2 large eggs
1/2 teaspoon shrimp paste
1/2 cup panko
3 tablespoons finely chopped nori(from sushi roll sheets)
1/2 cup chopped green onion
1 pound full cooked rough chopped crab preferably Dungeness
6 sesame seed hamburger buns, split

Instructions:

Heat a standard grill to medium high then brush rack with the oil.
In a 9-inch glass pie plate whisk together the sugar and vinegar then add the cucumbers and radishes, spread out in bottom of pie plate. Cover with plastic wrap then set aside.
Puree together in food processor the mayonnaise, avocado, wasabi paste, pickled ginger, lime juice, cilantro and 1/2 teaspoon salt. Set aside.
In a large bowl beat to blend the eggs, and shrimp paste. Stir in the panko, nori, green onions, crab and remaining salt. Divide into 6 portions then form into patties. Grill patties until golden and cooked through but sitll moist about 4 to 5 minutes per side turning once with a large metal spatula. During the last minute of grilling lightly toast cut side of buns on outer edge of grill rack. To serve drain liquid off cucumber mixture then place patties on bottom half of buns, top each with the cucumber mixtrue. Spread cut side of bun tops with the avocado mixture then place on top of patties.
