1/3 cup finely crushed Caesar croutons (Chatham Village)

1 tablespoon 21 Salute seasoning (Trader Joes)

2 teaspoons Lemon Pepper seasoning

1 1/2 teaspoons Cumin

1 teaspoon salt

1 teaspoon ground pepper

1 cup shredded Asiago cheese

1 cup shredded Mozzarella cheese

6 slices American cheese

1 large Vidallia onion

1 head Romaine lettuce

2 firm ripe beef steak tomatoes

1/2 cup Hellmans Light Mayonnaise

1 tablespoon + 1 teaspoon Basil Pesto

1/4 cup Pepper and Onion Relish ( I use Harry & Davids)

6 Ciabiatta rolls

Instructions

-In large bowl add beef, ketchup, Worcestershire, cooking creme, soup mix, egg, Kitchen Bouquet, panko, crushed croutons, 21 seasoning, lemon pepper, cumin, salt and pepper. Using your hands mix together until incorporated and divide into 6 burgers. Set aside on a platter and cover with saran wrap.

-Turn gas grill onto high heat.

-Meanwhile in small bowl mix Asiago and Mozzarella cheese. Set aside.

-Peel and slice Vidallia onion into rings. Wrap and refrigerate until ready to use.

-Trim and wash Romaine lettuce, spin out excess water.

Tear 12 good size pieces (about 3 inches by 3 inches), wrap and refrigerate until ready to use.

- Wash and slice tomatoes into thick slices. Place a paper towel on a plate , arrange tomatoes on top. Cover and refrigerate until needed.

-In medium size bowl mix mayonnaise, pesto and relish.

Cover and refrigerate.

-Put American cheese slices and bowl of Asiago cheese mixture on a tray near the grill.

-Place burgers on hot grill, grill for 1 minute on high heat.

After 1 minute reduce heat to medium. Do not flip burgers, continue to cook over medium heat for 4 to 5 minutes. Now flip burgers and cook another 4 to 5 minutes. Open grill and cover burgers with Asiago cheese mixture and 1 slice of American cheese. Melt slightly and remove burgers to clean tray. Set aside.

-Slice Ciabiatta rolls, place burger on bottom of roll. On top of burger add 2 slices of onion, 2 pieces of lettuce and 1 slice of tomato. Cover the top inside of the bun with the mayonnaise mixture. Put the top on the burger and enjoy.

Comments

If you can't find shredded Asiago cheese in your area you will need to buy it in the block form and shred it yourself to equal 1 cup.
