Sara’s Low Cal Turkey Burger

Ingredients

Serves 4-5 people Turkey Burger:
1lb of ground turkey
1/2 cup finely chopped roasted red pepper
1/2 cup finely chopped green scallion
1/2 cup finely chopped red onion
1TBSP of worchestershire sauce
1tpsp ground cheyenne pepper or to taste(I use different latin brands)
2tbsp of adobo with cumin (or more to taste)
salt and pepper to taste
Roasted Red Pepper Mayonnaise:
1 cup low fat or fat free mayonnaise
1/2 cup of finely chopped roasted red peppers
2 tbsp of ground cheyenne pepper (or to taste)
Multi Grain (or Whole Wheat) english muffins
Spicy Sweet Potato French Fries
2-3 large sweet potatoes
Adobo with Cumin Ground
Cheyenne Pepper
2TBSP olive oil

 

Instructions

Turkey Burger: Combine all ingredients together in a large bowl. Separate into 4-5 balls and pat into burgers/patties. Preheat grill to medium heat(or frying pan-grills are not so accessible in NYC) Place patties on Grill and allow to cook until completely cooked throughout (on grill- 5-6 minutes on each side) (on frying pan- 9-10 min on each side) do not burn, and cut burger if necessary to ensure that turkey meat in thoroughly cooked. Toast English Muffins. Combine all ingredients for Roasted Red Pepper Mayonnaise (either by hand or in food processor). Sweet Potato FF: Preheat oven to 400 degrees Microwave Sweet potatoes until slightly soft (not cooked although through). Slice Potatoes into shoe string style pot skins. Oil/lightly grease baking sheet Spread out FF so they are all flat. Sprinkle with cheyenne pepper and Adobo as desired. Cook for minimally 30 minutes until potatoes brown (and some burn).
