Saltimbocca Burgers

My wife and I love the flavors of Veal Saltimbocco. Here is our version of a very sexy and romantic meal in the form of a burger, this time, with an avocado spread. Strange combination but it works! The avocado balances out the salty proscuitto.

Ingredients 

Avocado Spread
½ Cup mayonnaise
½ Teaspoon ground white pepper
½ Teaspoon ground thyme
2 Large garlic cloves, peeled
1 Ripe avocado Salt
Burger Patties
1 1/2 Pound ground beef
½ Pound ground veal
2/3 Cup Sutter Home Merlot
1 Tablespoon plus 1 Teaspoon fresh sage, finely chopped
½ Teaspoon salt
½ Teaspoon coarsely ground black pepper
Vegetable oil for brushing on the grill rack
12 Slices proscuitto ham, thinly sliced
6 Slices baby swiss cheese
1 – loaves Ciabatta bread, cut to patty size
3 Tablespoons Extra Virgin Olive Oil
Red leaf lettuce

Instructions 

To make avocado spread, combine mayonnaise, pepper, and thyme in bowl and set aside. Lightly salt garlic cloves and smash with blade of large knife. Continue pressing garlic using coarseness of salt to make a paste. Add garlic paste to mayonnaise mixture. Cut avocado in half, lengthwise and remove pit. Gently spoon out avocado and fold into mayonnaise mixture until thoroughly combined. Refrigerate until ready to use. Preheat gas grill to medium. To make patties, combine beef, veal, wine, sage, salt, and pepper in large bowl. Mix well but avoid over-handling meat. Divide the meat mixture into 6 portions and form into even patties. When grill is ready, brush the grill rack with vegetable oil. Place proscuitto slices on aluminum foil, place on grill and cook 10 minutes or until crispy, turning halfway through. Place the patties on the rack, cover and cook, turning once until desired doneness, 6 – 7 minutes on each side for medium. While patties are cooking, brush top & bottom of Ciabatta bread with olive oil. During last few minutes of cooking, place proscuitto on burger patty, followed by cheese slice and allow cheese to melt. Remove burgers from grill and allow to rest, keeping warm. Place Ciabatta bread slices on outer edges of grill to lightly toast, 1 – 2 minutes per side. To assemble burgers, coat bottom slice of bread with avocado spread, add burger patty, and red leaf lettuce. Top with bread slice top and serve. Makes 6 servings.
