Sage and Apple Burger with Maple Horseradish Spread

Six years ago I made a lifestyle change to a more healthy diet. After losing 110 pounds, I feel the change has been successful. In my years of trying to cook healthy, I often try different flavor combinations. This recipe developed because of my desire for a flavorful non-beef burger.

1/4 cup no-fat mayonaise
3-4 tsps. horseradish (to taste)
1 tbsp. maple syrup
Non-stick spray
1.5 lbs ground chicken
1 tsp garlic powder
1 tbsp fresh sage, chopped
1/2 tsp ground pepper
1/2 tsp cumin
1 tbsp cinnamon
1/2 tsp nutmeg
1 granny smith apple, peeled and coarsely chopped
1/4 cup maple syrup
6 whole wheat rolls, cut in half
1 granny smith apple, cored and sliced into 6 rings

In a small bowl, stir together the mayonaise, horseradish and tablespoon of maple syrup. Set aside to allow the flavors to blend. Spray a grill with non-stick spray and preheat it. In a large bowl, combine the chicken and the next 8 ingredients. Mix well. Form the the chicken into six equal patties. Spray lightly with non-stick spray on each side. Place on grill and cook until fully cooked. Spread the horseradish mixture generously on the bottom half of each of the six rolls. Top the horseradish spread with one apple ring. Place the chicken burger on the apple ring and top with the roll top.
