Roasted Poblano and Avocado Burger

Ingredients

1.75 lbs. of ground chuck
.5 lbs. of ground pork
3 Tbsp. of 365 Southwestern Grille Seasoning
3 large poblano peppers
1 large Vidalia onion
2 Haas Avocados
1 tsp. of Whole 365 Southwestern Grille Seasoning
1 lime halved
1 tsp. of Chipotle Sauce
vegetable oil, for brushing on the grill rack
6 slices of Habanero Pepper Jack Cheese
18 pre-cooked bacon slices
6 large hamburger buns with sesame seeds

 

Instructions

1) Prepare a medium- hot fire in a charcoal grill. 2) To make the patties, combine the 1.75 lbs. of ground chuck, .5 lb of Bass Spicy Sausage and the 3 Tbsp. of  Southwestern Seasoning. Divide the mixture into 6 equal portions, being careful not to overwork the patties. 3) Roast the poblano peppers over a hot fire until the peppers become charred. Remove the peppers from the grill and allow to cool. Once cool, remove the charred skin, seed and stem the peppers. After seeding the stemming the peppers cut each pepper in half lengthwise and set aside. 4) Slice the onion into 6 thin slices, and set aside. 5) To prepare the avocado topping, slice them in half and remove the seed. After seeding, remove the flesh and mash coarsely in a small bowl. Add 1 tsp. of Southwest Seasoning and the juice from 1/2 of the lime, and add 1 tsp. of Chipotle Sauce, adding more lime if needed. 6) When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack and grill until done, usually 5 minutes on each side. During the last minute of grilling place the cheese on the burgers and grill until the cheese begins to melt. 7) During the final minutes of grilling the patties, add the bacon to the grill to warm. 8) When the patties and bacon are ready, remove from the grill and set aside. 9) Place the rolls, cut side down and toast lightly, turn the rolls over and toast the other side lightly. Then remove the rolls from the grill. 10) To assemble the burgers, place a slice of onion on each roll bottom and place a burger on the onion cheese side down. Next top the burger with 1/2 of a poblano pepper, three slices of bacon, and an equal portion of the avocado mixture. Add roll tops and serve.
