Reuben Burger

I love a good Reuben sandwich and this is my take without using rye bread or corned beef.


1 cup bottled Thousand Island dressing
1/4 cup finely chopped yellow onion
1/4 cup finely chopped sweet pickles

2 cups finely crushed rye crackers
2 pounds ground beef
2 eggs
2 teaspoons garlic salt
1 teaspoon pepper
1 tablespoon ground pickling spices (I used a spice grinder for this because these spices are quite hard to grind)
1 tablespoon caraway seeds

1.5 cups sauerkraut drained (reserve liquid)

6 slices swiss cheese

6 high quality buns or kaiser rolls, split


Prepare a medium-hot fire in a charcoal grill or preheat a gas grill to medium-high.

The spread: Enhance the bottled dressing by stirring in the pickles and onions. Refrigerate until ready to use.

For the patties: Place all patty ingredients plus 1/2 cup of reserved sauerkraut liquid in large mixing bowl and combine well. Avoid over handling.

Form into 6 patties. Hold patties in fridge until you're ready to grill.

Brush the grill rack with a little oil to prevent sticking.

Place the patties on grill rack and cook for about 4 minutes per side.

While patties are cooking, lightly oil cut edge of buns.

During the last few minutes of cooking put a slice of cheese on each patty to melt and place the buns, cut side down, around the outer edges of the rack to toast.

To assemble: spread both cut sides of toasted buns with spread then place a patty on each bun bottom. Top patties with 1/4 cup sauerkraut. Now just add the bun tops and serve.



You can make your own Thousand Island if you like - - but I find enhancing the bottle product works just as well.
