Red Wine Demi Burger

This burger was inspired by my mother and her love for great food and wine. Pre heat your grill to med-high.


1/2 cup colavita olive oil
3 1/2 inch slices of a large onion
1 portabella mushroom cap, gills removed
1 & 1/2 tablespoons salt
1 tablespoon pepper
1 & 1/2 lbs ground beef
4 cloves garlic minced
3 tablespoons grey poupon mustard
1/2 cup & 2 tablespoons sutterhome merlot
1 cup pre cooked bacon, chopped
1 cup shredded gryere cheese
1/2 teaspoon demi glace sauce concentrate
1 cup real mayo
6 slices of tomatoes
6 pieces green leaf lettuce
6 buns


pre heat grill to medium high brush onion slices and mushroom with olive oil and sprinkle with salt and pepper, grill until soft and caramalized. set aside and let cool. while veggies are cooling make burger patties by mixing beef,garlic, 1tablespoon salt, 1/2 tablespoon pepper, and 1/2 cup red wine mix well but do not over mix. separate into 12 equal balls and then form them into patties. set back into fridge to chill. once veggies are cool cut into 1/4 inch pieces mix with bacon and cheese and set aside. pull out patties and lay out 6 put a scoop of the veggie mixture on each and place the other patties on top. seal well and grill 7- 10 min on each side while burgers are cooking mix mayo, demi, and 2 tablespoons merlot spread on each bun. once burgers are done place on the buns and top with lettuce and tomatoes.
