Rajun Cajun Fiesta Burger (Smoked Cheddar, Bacon, Avocado and Chipotle Burger)

This ultimate American burger was created from my love for both Cajun style cooking and good old fashioned Mexican food. With its spicy and smokey flavor this burger is sure to have the locals “like at the bar Cheers” begging for more.If you are really hungry and you can get your mouth around this local masterpiece you’ll be in for a real treat

Ingredients:

The Patties:

12 pieces of Smithfields thick sliced Hickory Smoked Bacon (or any Hickory Smoked Bacon)
1/2 cup of minced Spanish onion
3 pounds of ground chuck
2 tablespoons of Lea & Perrins Worcestershire sauce
2 tablespoons of cajun seasoning
1 teaspoon of kosher salt
1/2 teaspoons of ground black pepper
1/4 teaspoons of garlic salt

Chipotle Mayonnaise Sauce:

2 pieces of finely minced San Marcus Chipotle Peppers in adobo sauce
1 1/4 cup of mayonnaise
1/4 teaspoon of kosher salt

For the Burger toppings:

18 slices (8 oz appox.) of Applewood Smoked Cheddar cheese (or any brand of smoked cheddar cheese)
6 (4 inch) Kaiser rolls cut in half
6 per washed leafs of Green Leaf lettuce
1 6×6 tomato cut into 6 equal portions
18 slices of California avocado

For Grilling:

2-3 tablespoons of vegetable oil

Instructions:

In a large skillet, fry bacon over mediun heat until crispy; drain bacon on a paper towel and set aside. With the reserve drippings from the pan add the minced onions and cook over medium heat until tender; drain well and allow time to cool.

In a large bowl combine ground chuck, Worcestershire, cajun seasoning, minced onions, salt, pepper and garlic salt. Please make sure that you handle the meat as little as possible to avoid compacting it. MIx well. Divide mixture into 6 equal portions; shape each into a patty about 4 inches wide. Set aside.

Chipotle Mayonnaise:

In a medium mixing bowl combine the minced chipotle peppers, mayonnaise and the salt. Allow time to chill.

Preheat the gas grill to medium heat or if you have a charcoal grill prepare a medium hot fire.

When the grill is ready, brush the grates with the 2-3 tablespoons of vegetable oil. Place the patties on the rack, cover and cook turning once until done to desired temperature. (4-5 minutes on each side for medium rare and 6-7 minutes on each side for medium) During the finale cooking minutes of the burgers place 3 slices of the smoked cheddar cheese on each burger, also at this time place the kaiser tolls, cut side down on the outer edge of the grill unitl lightly toasted.

To assemble the burgers, spread equal amounts of the chipotle mayonnaise on eash of the tops. On each roll bottom place the leaf lettuce down, followed by sliced tomatoes, patty, avocado slices, bacon and then add the tops and serve.
