Prosciutto-Wrapped Mozzarella Burgers with Citrus-Date Sauce

Ingredients

Citrus-Date Sauce:
1 ½ cups dried dates, roughly chopped
½ tsp. orange zest
½ tsp lemon zest
½ cup freshly squeezed orange juice
2 tsp. freshly-squeezed lemon juice
¼ tsp nutmeg, grated
½ cup Sutter Home Cabernet Sauvignon
Patties:
1 ½ lb. ground chuck
1 ½ tsp. kosher salt
1 ½ tsp. fresh ground pepper
1 cup fresh basil, minced
6 slices prosciutto, thinly-sliced Vegetable oil, for brushing grill rack 6 ( ½-inch thick) red onion slices
6 Kaiser rolls, split
6 slices Mozzarella, thinly sliced

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To prepare the Citrus-Date sauce, combine dates, orange zest, lemon zest, orange juice, lemon juice, nutmeg, and Cabernet Sauvignon in a saucepan. Simmer over medium heat for 15 minutes. Pour mixture into a food processor and puree until mixture has consistency of a paste. Pour puree into fine strainer over a glass bowl and mash to collect sauce in bowl. Set aside and allow sauce to cool. To prepare the patties, combine ground chuck, kosher salt, ground pepper, and basil into a mixing bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide mixture into 6 equal portions and form portions into thin patties to fit rolls. Wrap one slice of prosciutto completely around each patty, overlapping ends of the prosciutto slice on one side to form a seam. Brush the grill rack with oil. Place the patties on the rack, prosciutto seam side up, cover, and grill until prosciutto is crisp on the bottoms, about 6 to 7 minutes. Turn the patties and continue grilling until done to preference, about 5 to 6 minutes longer for medium. While patties are cooking, place red onions on grill rack cook until slightly softened, about 3 minutes per side. During the last few minutes of cooking, place rolls on outer edges of rack to toast and place one slice of mozzarella on top of each patty. Close lid to melt cheese. To assemble burger, place one burger patty on a roll bottom and spoon on a generous amount of citrus-date sauce and a red onion slice. Add roll tops and serve. Makes 6 burgers.
