Pork Burgers with Spiced Rum Mango Sauce

When mangoes come in season here in Southern FL we scramble for new ways to use these beautiful fruits up. Fruit and pork just go hand in hand here, and tropical flavors are very popular here.

We often pair pork up with pineapple and mango salsa, so the pork burgers with a rum and mango sauce were the next logical step.

Ingredients:

Burger part:

1 1/2 pounds ground pork

1 teaspoon freshly squeezed lime juice

2 tablespoons Pineapple Teriyacki Sauce (Kona Coast makes this)

1/2 teaspoon each salt and pepper

1/4 teaspoon ground fresh ginger

Spiced Rum Mango Sauce:

1/4 cup water

1/4 cup pineapple juice

1 tablespoon butter

1 tablespoons brown sugar

1 teaspoon cornstarch

2 tablespoons cold water

1 cup ripe mashed mango

3 tablespoons spiced rum

1/4 teaspoon ground fresh ginger

1 tablespoons sweet Thai chili sauce.

Bread:

6 Kings Hawaiian Sandwich Buns

Cheese:

6 slices American Cheese, about 1 ounce each

Toppers:

6 tablespoons mayonnaise

6 slices red onion

6 slices grilled pineapple rings

12 Boston Bibb lettuce leaves

Instructions:

In a large bowl combine all burger ingredients.

Form into 6 patties

Pre heat grill to med high.

Make the rum mango sauce by combining the 1/4 cup water, 1/4 cup pineapple juice ,butter and sugar in a flame proof saucepan.

Stir to dissolve and bring to a boil.

Dissolve the cornstarch in the 2 tablespoons water, stir into the hot mixture, stirring constantly, return to a boil.

Cook for a minute, add the mango, rum, ginger and chili sauce.

Stir and remove from heat.

Cover and keep warm.

Grill the burgers over med high heat to your desired doness, we like 5 minutes per side.

While the burgers are cooking, grill the pineapple slices as well unti you have grill marks on each side.

The last 5 minutes of cooking toast the cut sides of the rolls, and place a slice of cheese on each burger.

Close cover to melt.

Slather top bun with 1 tablespoon mayonnaise.

Put burger on bottom bun, spoon about 1 tablespoon of Spiced Rum mango Sauce over, 1 slice onion, 1 slice grilled pineapple, 2 lettuce leaves.
