Piri Piri Burger with Citrus Basil Avocado Topping

Ingredients

Piri Piri Sauce
1 cup Colavita Extra Virgin Olive Oil
4 fresh jalapenos
2 fresh Poblano Peppers
1 tablespoon crushed red pepper
2 garlic cloves
1/4 cup fresh cilantro
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
Citrus Basil Avocado Topping
2 small avocados, pitted and peeled
2 tablespoons Citrus & basil rub
Patties
1 1b. ground sirloin
1 lb. ground chuck
2 teaspoons salt
1/2 teaspoon fresh ground black pepper
Vegetable oil for brushing grill
6 slices Pepper Jack Cheese
6 onion flavored Hamburger buns
3 cups shredded Romaine Lettuce
6 1/4 inch large tomato slices

 

Instructions

Prepare a medium hot grill in a charcoal grill with a cover or preheat gas grill to medium heat. To make spicy Piri Piri- Combine oil, jalapenos,poblano peppes, crushed red pepper, 2 garlic cloves,and cilantro in a food processor. Pulse and process until well blended. Season with salt and black pepper. Set aside. To make Citrus Basil Avocado topping: Peel and Pit avocado. Mash avocado with a fork to a smooth consistency. Add Citrus-Basil seasoning. Mix well and set aside. TO make patties: Combine sirloin and ground chuck with 1/2 of piri piri. Mix well handling the meat as litle as possible to avoid compacting it. Add 2 teaspoons salt and 1/2 teaspoon black pepper. Blend well. Divide the mixture into 6 equal portions and form patties to fit the hamburger rolls. Brush the grill with oil. Place the patties on the rack, cover and grill. Baste with remaining 1/2 cup of piri piri sauce. Grill 3-4 minutes. Turn patties and continue basting and grilling to an internal temperature of 160, about 5 minutes. During last stages of grilling patties, place a slice of cheese until slightly melted. Remove from grill, cover with foil and keep warm. Place buns cut side down on the outer edges of the grilling rack and toast lightly. To assemble burgers: Place equal amount of citrus basil avocado topping over the cut sides of each toasted roll. On each roll bottom, place 1/2 cup shredded lettuce, a patty with cheese and a tomato slice. Add the top and serve Make 6 burgers Helen, Artesia, New Mexico
