Pickilous Burgers with Pickle Me Pink Sauce

I make home made dill pickles and we put them on and in just about everything. I even use the juice in potato salads and the sauce that crowns this pickilous pickle burger.
When I make my pickles I put in one habenero pepper in each jar , and it imparts a little bite and a nice flavor.

Ingredients

Burger Part:
11/2 pounds ground beef 80/20
1/3 cup chopped onions
1 teaspoon worchestershire sauce
2 teaspoons minced garlic
1/2 teaspoon each salt and pepper
6 dill pickle spears, about 3 inches long, and about 1/2 inch wide.
6 strips pepper bacon

Pickle Me Pink Sauce:
1/2 cup mayonnaise
1/2 cup French dressing
1/4 cup chopped red onion
1/2 cup chopped dill pickles
1/4 cup dill pickle juice
1 teaspoon hot sauce
1 to 2 tablespoons ketchup (to get the pink color)
1/2 teaspoon each salt and pepper

Roll:
6 of a smaller crusty sub roll about 6 inches long

Cheese:
6 slices plain ole yellow American cheese, cut in half the long way.

Toppings:
Pickle me Pink Sauce, desired amount
6 scallions, sliced in half the long way (2 per burger)
1 1/2 cups sauerkraut, optional
6 slices raw onion
6 slices tomatoes

Instructions

In a large bowl combine the beef, onions, worchestershire, garlic, salt and pepper, being carefull not to over mix and compact the meat.
Around each pickle arrange 1/6 of the burger mixture, completely covering the pickle.
Wind a strip of pepper bacon around each burger, securing the ends with toothpicks.
Make the Pickle Me Pink Sauce by combining all sauce ingredients, cover and chill.
Cut the sub rolls in half lengthwise.
Pre heat grill to medium high and grill until bacon is crispy and hamburgs are done to your liking.
The last 5 minutes of cooking toast the cut sides of the rolls and lay 2 strips the long way of cheese on each burger.
Slather the Pickle me Pink Sauce on the top and bottom buns, put a burger on the bottom half of the burger, 4 scallion strips and toppings of your choice.

Comments

This can be done without the bacon, but honestly i don't know why anyone would do that.
If you don't have home made dills, use the store bought spears.
