Pesto Burgers with Tomato Salsa and Lemon Yogurt Spread

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Ingredients

Basil Pesto
1/2 cup roasted pine nuts
4 cups of basil
2 jalapenos with seeds
4 cloves of garlic
1 cup shaved parmesan cheese
2 teaspoons salt
1 1/2 teaspoons pepper
2 Tablespoons lemon juice
1/4 cup extra virgin oilve oil

Patties
2 pounds ground beef
Pesto (from recipte above)
1/4 cup Sutter Home Pinot Grigio

Tomato Salsa
2 medium sized red tomatoes chopped
1/2 teaspoon salt
1/4 teaspoon pepper
4 tablespoons chopped yellow pepper
1/4 teaspoon balsamic vinegar
1/4 teaspoon extra virgin olive oil
1/4 teaspoon fresh chopped thyme

Lemon Yogurt Spread
2 cloves garlic finely chopped
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
Juice from 1 lemon
1/4 teaspoon grated lemon zest
1 cup The Greek God’s plain yogurt
1 Tablespoon extra virgin olive oil

Vegetable oil for brushing the grill rack
6 Bakery Wheat Buns
1/4 cup butter, softened

 

Instructions

Preheat a gas grill to medium-high.

To make the pesto, place the pine nuts in a fireproof skillet and roast for 3-4 minutes stirring occasionally.
Place them in a food processor and add the basil, jalapenos, garlic, cheese, salt, pepper, lemon juice, and olive oil. Blend together until smooth.

For the burgers combine the pesto, beef, and wine – mixing very well with your hands. Form mixture into 6 patties, cover, and refridgerate until ready to grill

For the tomato topping combine the tomatoes, salt, pepper, yellow pepper, vinegar, olive oil, and thyme. Toss together, cover, and refridgerate until burgers are done.

For the lemon yogurt spread combine all ingredients and vigorously stir until well combined. Cover and refridgerate until burgers are done.3

Brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once. 4-5 minutes on each side will be medium. Butter both sides of the buns and place on the grill rack for 1 minute.

To assemble the burgers spread a tablespoon of lemon yogurt on each bun. Place one patty on top of each bottom bun and then spread two tablespoons of tomato salsa. Place the top bun over the tomato salsa and enjoy!
